Default Red Chile Sauce

Red Chile Sauce
--This is a traditional recipe and is great over Cheese and Onion Enchiladas, or for Red Chile Chicken Enchiladas. You could also make Carne Adovada by marinating and then cooking pork in this as well.


Ingredients:
3 T flour
2 T oil
4 T chile powder
2 1/2 C water
2 cloves garlic, minced fine
1 1/2 t salt
oregano
Brown the flour in the oil.

Blend in the chile powder.

Slowly add 2 1/2 C water and stir until the lumps are removed (Use a whisk.)

Add the minced garlic and salt.

Add oregano to taste.

Simmer 10-15 minutes over medium heat.
