Thanks, I saw you post the enchiladas in the dinner thread & was going to ask you to post the recipe for your sauce.
Enchilada gravy sauce
makes 3 quarts (yep you get to freeze it when you are done!!!)
1c vegetable oil
2 c all purpose flour
1/4 c chili powder
1 tbsp ground cumin
1 tbsp garlic powder
1 1/2 tbsp salt
1/4 tsp pepper
2 qts water
1. heat oil in a large heavy saucepan over medium heat. Add the flour and cook, stirring constantly until the flour is lightly browned. Stir in all of the dry ingredients and stir constantly for 2-3 minutes.
2. Gradually add the water, stirring until smooth. Cook, stirring frequently for 5 minutes then reduce the heat and boil gently for 15 minutes.
The sauce is then ready to use or you can cool it and freeze for later! It's very easy and delicious!

I hope you enjoy it. I was really happy when I found this one, because with the store bought stuff, it's really heavy on tomato and vinegar flavor, which I never enjoyed. This is just spice and sauce. Soooo good!
Sounds yummy--thanks for sharing. Canned enchilada sauce is a little pricey, too.
Do you think this could be canned instead of frozen??
Yummo! I had found an adobo sauce that we made our own chipotle peppers with that was heavenly. I am gonna have to try this now!

I would be a bit nervous in canning (water bath) because there is nothing acidic to prevent it from spoiling or going bad (like vinegar, or lemon juice, etc). You may be able to get away with pressure canning it, but would have to do a bit of research to see if you could find at what pressure it would need to be canned at.

Sorry, I have never canned and am not very familiar with it. Hope you find a storage method that works for you so you can try this delicious sauce!
