Default Homemade Macaroni & Cheese

Good way to use up some of that free pasta!

Macaroni & Cheese

12 oz pasta shape of your choice, cooked according to package directions- MrPinecone favors the penne

2 tbs butter or margarine
2 tbs flour
2 cups warmed milk
1 tbs dijon/brown mustard
1 tbs dry mushroom gravy mix
2 cups shredded cheese- we use 2% cheddar

Melt butter in 2 qt saucepan. Add flour and whisk until cooked together. Slowly add milk (about 1/2 c at a time) and whisk until smooth and lumpless. Once all the milk is added, stir over med-low heat until thickened-- a few minutes. Add mustard & mushroom gravy mix. Remove from heat and whisk in shredded cheese until smooth.

Pour over pasta and stir. Place pasta & sauce into 3 qt baking dish. You can top with grated parmesan, or breadcrumbs and dots of butter. Bake at 350 for 1/2 hour.

This is a great recipe that can be increased or decreased as needed.
Use 1 tbs of butter and 1 tbs of flour for every cup of milk.
EX: use 3 of each if you use a pound of pasta.

Default Homemade Macaroni & Cheese

Homemade Macaroni & Cheese

6oz macaroni
1/2 stick margarine
1/4c flour
1/4tsp dry mustard
1 tsp salt
dash pepper
2c milk
1c or 1/4# processed cheese

Cook pasta, drain, set aside. Melt margarine, add flour. Allow to thicken. Slowly add milk. Add cheese, salt, pepper, mustard. Thicken. Add pasta. Butter casserold dish, add pasta mixture. Bake 400* for 20 minutes.

Another recipe from a friend's mom:

1 16 oz box of macaroni cooked till done
Melt 4 tablespoons butter in a large pan
Add 1/2 cup flour
1-2 teas salt
1 1/2 teaspoon dry mustard
1/2 teaspoon pepper

Cook over low heat about 2 minutes.

Slowly add 5 cups milk
Cook over high heat untill thickened about 5-7 minutes
Turn off the heat
Grate a block of sharp chedder cheese, about 16 to 20 oz
Add most of the cheese to the milk mixture.

Mix remaining cheese the 1/2 to 3/4 cups seasoned bread crumbs.

Combine macaroni and cheese sause. Stir well.

Pour in a big pan and top with cheese and breadcrumb mix

Bake at 375. for 35-45 minutes.

I like all of the recipes above - here is mine - not so many ingredients.

1 box macaroni (or any pasta you like) - cook until al dente (it will cook more while it bakes)

In a sauce pan, pour 1 1/2 cups milk (I dont measure anything, this is a guess)

1/2 stick real butter - roughly
some garlic salt
some pepper
1 pound of sliced American Cheese

While the milk, salt and pepper are heating - slowly so it does not burn - toss in the cheese slices a few at a time, after they melt, add more - repeat.

Mix in the macaroni - put in a Pam'd baking dish, top with French's Fried Onions, bake in the oven for about 10 minutes.

If you make this ahead of time - don't put the onions on till right before you bake it and give it a quick stir to moisten up all the macaroni. Also - if you make it ahead of time - the macaroni will continue cooking - it may get a little soft.
