Kozy Shack Style Rice Pudding 1/2 gallon milk (any kind- I have used both skim and 1%)
1 cup white rice (short or medium grain- arborio is good)
1 cup sugar
Place on medium heat for about an hour, stirring occasionally. Turn off, let stand for 15 min. to cool slightly.
In a bowl, combine:
2 eggs
1 cup milk
1 T vanilla
Beat until frothy. Pour into rice mixture. Add cinnamon, raisins and nutmeg to taste, if desired. Reheat until just bubbling. Pour into containers.
I once used a cup of slow-churned ice cream instead of milk at the end and it was great. Same with leftover low fat Cool Whip, but the plain milk is fine, too.
