Default Minorcan Sausage Pilau (rice)

This is a home town recipe. Good way to use your free MUIR GLEN for the tomatoes.

1 1/2 lb. smoked sausage OR 1 1/2 lb. fresh link sausage OR 1 1/2 lb. kielbasa sausage
1/2 lb. diced bacon
2 lg. onions, diced
2 bell peppers, diced
2 large cans stewed tomatoes (I use Muir Glen Fire Roasted normal size but I use 4 of them)
1 c. water
1 can Uncle Ben's rice* (I use two since I use reg size cans)
1 small can tomato sauce
1 1/2 TBSP datil pepper juice (hot pepper) or use Jalapeño juice
Salt and pepper

*Use empty tomato can to measure rice.

Sauté green peppers, onions and bacon in large cooking pot. When browned lightly, add remaining ingredients (do not remove bacon drippings). Cover and simmer until rice has absorbed all liquid, stirring occasionally.

Serve with garlic bread and salad. Serves 6

When I make this I allow for 1 hour to simmer since all ingredients are not hot so it takes awhile to cook the rice.

Recipe can be used for shrimp too. You would substitute the sausage for shrimp.
