I guess this would fall under pasta dishes. This may not be "authentic" but it sure is GOOD!!:shrug7:
I got the sauce recipe from a website and tweaked it to my liking. Feel free to tweak it to yours!
The Sauce:
1/2 C creamy peanut butter
1/2 C water
2 TBSP soy sauce
1 TBSP brown sugar
2 TBSP vegetable oil
2-3 cloves fresh garlic, crushed and minced.
1 tsp panang curry paste
2 TBSP fresh lime juice
Add all ingredients to a small sauce pan and set burner on low to medium. Stir constantly. DO NOT BOIL! Once it gets creamy, remove it IMMEDIATELY!
Seriously, this stuff shoots like boiling lava and will separate if it gets too hot for too long. But if that happens, all is not lost! Just clean the peanut sauce off of you, the stovetop, walls, floor, etc. Then, get out that mixing wand you don't use anymore and go to town. You may have to add a tiny bit of water to get it creamy again.
The Rest:
1 cup raw shrimp, peeled and deveined, tails removed
1 package dry rice noodles
2 cups chinese broccoli
2 large eggs
1 cup fresh bean sprouts
1 lime wedge
3 - 4 TBSP vegetable oil
Crushed peanuts
Fresh Cilantro
Soak your rice noodles in hot (not boiling) water for 10 minutes or until soft. Drain noodles. You can cut them up a little if you desire. Toss with a bit of vegetable oil and set aside in a bowl. Noodles can be soaked while you are cooking the peanut sauce.
Heat your wok over med-hi heat. When wok is hot (not red hot or turning colors hot), add vegetable oil. Wait a minute and add shrimp. Sautee shrimp until it is pink on both sides. Scoot the shrimp to one side and add the egg. Allow egg to cook before turning over. Once egg is pretty much cooked and not runny, cut it up and mix with the shrimp. Next, add those noodles and very quickly sautee until they are fully cooked. (You'll be able to tell, they'll be very floppy and soft.) Then, add your chinese broccoli and cook until it is dark green. Add the peanut sauce and mix well. At the last minute, add some bean sprouts and stir them in. They should still be crunchy.
Plate and garnish with some crushed peanuts, cilantro and a wedge of lime. Enjoy by tearing up the cilantro over the noodles and squeezing the lime all over it.
Note: This can be made with chicken, beef, shrimp, pork, tofu, etc. It's up to you, though I prefer chicken, shrimp or tofu.
