Is it Pasta Carbonara Frittata? I can type it out if that's the one.
I was planning on making the All You pasta recipe from this month's issue for dinner guests tonight, but I can't find the page I tore out of the magazine & can't find the recipe online. Will someone post it, please? All I remember is seeing pasta & turkey bacon...
THANKS!

Pasta Carbonara Frittata
Prep: 5 min. Cook: 25 min. Serves: 4 Cost per serving: $1.52
Salt and Pepper
8 oz Spaghetti
2 tbsp. olive oil
4 oz turkey bacon
6 large eggs
½ grated Parmesan
2 cloves garlic, finely chopped
- Bring a large pot of water to boil and cook spaghetti until tender about 8 minutes. Drain, transfer to a large bowl and toss with olive oil. Let cool to room temp.
- Cook Turkey Bacon in large skillet over medium-high heat until crisp 5 to 8 minutes. Remove bacon to paper towels to drain. Discard all but 1 tbsp of fat in skillet.
- Preheat broiler to high. Whisk together eggs, Parmesan, garlic, ½ tsp. salt and ¼ tsp. pepper in a bowl. Pour over spaghetti and toss to coat. Crumble bacon into bowl and mix well.
- Place skillet on stove over medium-low heat and add egg-and-spaghetti mixture, spreading into and even layer with a spatula. Cook until bottom is well browned about 8 minuts, sliding a spatula underneath frittata occaisonally to loosen.
- Place panunder broiler and cook until top is golden and set, about 3 minutes. Cut frittata into wedges and serve.

I think that is what she is talking about because the recipe does have pasta and turkey bacon in it. I would have gladly typed the recipe and I did start to but when I got to the part where it explains how to cook it, I noticed that I had cut the coupon out on the back of the page and the rest of the recipe is not there!

RIP my lil sweet angel Cooper 04/23/02-03/03/2010. You are greatly loved and missed.
Thank you! I guess this is what I saw...I didn't remember the eggs (I know, I know - fritata = eggs), but I guess this would still make a good entree?
THANKS for typing it out.
