Fabulous Israeli Couscous/Pasta Salad This is a wonderful pasta salad that uses up some of those stockpile ingredients.
All amounts are pretty much variable.
Cooked Israeli Couscous (the large stuff) or small pasta (orzo, those new Barilla piccolini, etc)
Roasted vegetables
Sundried tomato vinaigrette salad dressing
Mix it all up and let it sit for a bit for the flavors to blend. It can be served hot or cold. Beyond yummy.
** For the main stuff, you can use Israeli couscous or pasta.
I actually used the Trader Joe's Harvest Blend found in the rice section. It's Israeli couscous, tiny garbanzo beans, quinoa, and 2 colors of orzo. Cooked it with stock for extra flavor.
** Roasted veggies: rub veggies with a combo of olive oil, garlic and thyme and roast in the oven for 30 min at 400. I used carrots, vidalia onions, asparagus and zucchini and diced them all up.
** Dressing: I used Ken's Steak House Lite Sundried Tomato Vinaigrette to save a few calories.
