30 minutes and under - 5 days of healthy and vegetarian! Monday through Thursday DH gets home at 4:45-5:00pm and I leave for work at 5:20pm. Which means I have dinner ready for him and DS when I leave. So, we have a lot of fast recipes. We are vegetarians, DS does eat some seafood. Often diced/crumbled meat could be added to the recipes as sometimes I add in Morningstar veggie crumbles. Steamed Veggies overed Buttered Brown Rice
Put in a large or xlarge microwave steam bag (we use both Glad Simply Cooking and Ziploc Zip n Steam):
1 bag Dole mixed broccolli florettes and baby carrots
2 medium quartered and thinly sliced red potatoes
1 sliced Zuchinni (optional, I add it when its in season)
2 tbsp olive oil
1 1/2 tbl seasoned salt (we use Lowry's - add more or less per your taste)
*Seal the bag, shake it gently and place in microwave for 6 minutes or until veggies are tender-crisp.
*W eat them over buttered brown rice made in the Rice Cooker or if time is really a crunch, I grab from my HUGE Uncle Ben's stockpile of rice pouches (original flavor). Chef's Salad
3 Diced roma tomatoes or 6 cherry tomatoes cut in half
3 bags Fresh Express Salad (we use the small $1.00 bag at walmart (free woo) that have shredded carrots and purple cabbage in them)
1/2 c Shredded Cheddar Cheese
Handful croutons or crumbled saltines
Salad Dressing (go raid that Kraft stockpile!)
*Combine all ingredients, serve with biscuits Green Bean Almond Rice
1 tablespoon butter or margarine
1/2 cup slivered almonds
1/2 cup chopped onion
1/3 cup chopped red pepper
3 cups cooked brown rice (cooked in chicken broth)
1 10 ounce package frozen French-style green beans, thawed
1/8 teaspoon ground white pepper, or to taste
1/4 teaspoon tarragon
*Melt butter in large skillet over medium-high heat. Add almonds; stir until lightly browned. Add onion and red pepper; cook 2 minutes or until tender. Add rice, green beans, white pepper and tarragon. Stir until thoroughly heated. Pansit Philipino (Stir Fry)
2 packages pre-cut stirfry vegetables
2 tbl cooking oil
1/2 cup soy sauce
3 cloves garlic
3 packages Ramen Noodles
1 package bean threads or rice sticks (I use a package of rice noodles)
*In large frying pan or wok, combine oil, cut up garlic, brown. Mix 1/2 c water and 1/2 c soy sauce, add to pan/wok. Dump in vegetables. Steam for about 4 minutes, covered.
*Break up Ramen Noodles and add to stir fry. Cut up bean threads/rice sticks and add. Stir. Add a SMALL amount of water if needed to cook noodles. (Serves 6) Black Bean Burgers

Morningstar Black Bean patties
Sliced Onions
Green Leaf Lettuce
Ketchup
Sliced American Cheese
*Preheat the oven and heat up a batch of frozen fries. Then, heat the patties and buns on a large griddle on medium heat 7-10 minutes. Prep the lettuce, onion and cheese. Assemble the burgers and enjoy!
*This is often a Friday recipe, when I just want to relax with my family. Love tossing them out on the grill when the weather is nice!
