What form of SPLENDAŽ No Calorie Sweetener is easiest to use for cooking and baking?
Both the granular and packet forms of SPLENDAŽ No Calorie Sweetener can be used in cooking and baking. However, SPLENDAŽ No Calorie Sweetener, Granular measures and pours just like sugar, so it is easy to use:


1 cup of SPLENDAŽ Granular is equal in sweetness to 1 cup of sugar. SPLENDAŽ No Calorie Sweetener can also be purchased in packets to sweeten coffee or tea or to sprinkle on cereal or fruit.




If a recipe also includes other sweeteners, such as brown sugar, corn syrup, molasses, maple syrup or others, can you substitute SPLENDAŽ No Calorie Sweetener, Granular for all of the sweeteners?


Sweeteners do more than just provide a sweet taste. Some sweeteners also lend color, texture, or flavor and prevent moisture loss. SPLENDAŽ Granular works best in recipes where sugar mainly plays a sweetening role, such as fruit fillings, cheesecakes, custards, sauces, and marinades. In these recipes, you can feel comfortable substituting SPLENDAŽ Granular for other sweeteners.


In some recipes, such as cakes, cookies, and muffins, you can make a few changes in the recipe to have great results.


Or you can use new SPLENDAŽ Sugar Blend for Baking, which delivers the sweetness, volume and moistness you expect in your baked goods, but allows you to use half of the sugar you would ordinarily use. When making your favorite recipes, a half-cup of SPLENDAŽ Sugar Blend for Baking replaces a full-cup of pure sugar, with a 50% reduction in sugars and carbohydrates from sugar.


Also, coming soon is new SPLENDAŽ Brown Sugar Blend, a blend of brown sugar and SPLENDAŽ Brand Sweetener for use in sprinkling, cooking and baking.





Can SPLENDAŽ No Calorie Sweetener be used in microwave cooking?
Yes. SPLENDAŽ No Calorie Sweetener retains its sweet taste in the wide variety of temperatures and cooking times used in microwave cooking.





Can SPLENDAŽ No Calorie Sweetener be used in frozen desserts?
Yes. SPLENDAŽ No Calorie Sweetener works well in frozen desserts, particularly fruit sorbet. However, the texture may not be as creamy as you may be used to. SPLENDAŽ No Calorie Sweetener will freeze the same as sugar in an ice cream.





Can SPLENDAŽ No Calorie Sweetener be used in high altitude baking?
Yes, it can be used in high altitude baking. Keep in mind that higher altitudes (3000 feet and above) usually necessitate minor changes when baking. High altitude baking guidelines generally suggest less sugar and leavening and more liquid.



Baking Guidelines for Regular Splenda:
Confections
In recipes where the amount of sugar is quite high, sugar often contributes significantly to structure and texture.
Frosting, candy, fudge, caramel, pecan pies, angel food or pound cake:

For best results, only replace about 25% of the sugar required with SPLENDAŽ Granular instead of a full sugar replacement.




Volume / Height
You may notice a smaller yield when substituting SPLENDAŽ Granular for sugar. In some cases, cakes and quick breads will not rise as high as their full-sugar counterparts, but they will still taste delicious!


To achieve a better rise: Switch from 9" round pans to 8" round pans with 2" sides. Also, try adding 1/2 cup nonfat dry milk powder and 1/2 teaspoon of baking soda for every 1 cup of SPLENDAŽ Granular.





Creaming
When creaming butter or margarine with SPLENDAŽ Granular, your mixture will appear less smooth than with sugar, and may separate upon the addition of eggs. This is normal and you should continue following the recipe instructions





Texture
Cookies often rely on brown sugar for their chewy, crunchy texture. To retain the texture, replace only the white granulated sugar in your cookie recipes. You can also try replacing a bit less of the total sugar or by using SPLENDA Ž Sugar Blend for Baking. Don't forget -you need only half as much SPLENDA Ž Sugar Blend for Baking as the amount of sugar called for in your recipe. Only 1/2 cup is needed to replace 1 cup of pure sugar. You may need to flatten the cookies before baking to aid spreading. Jams, jellies, puddings and custards, when made with SPLENDAŽ No Calorie Sweetener, Granular, may be slightly thinner or soft-set.




Flavor
For cookies, puddings and custards, use an additional teaspoon of vanilla extract per one cup of SPLENDAŽ Granular to enhance flavor. For quick breads and muffins, add one or two tablespoons of honey or molasses to boost flavor and provide some moistness.





Yeast Activation
SPLENDAŽ Granular will not activate yeast. Maintain at least two teaspoons of sugar in recipes calling for yeast and replace the remaining sugar with SPLENDAŽ Granular.





Browning
In the baking process, sugar caramelizes to produce the familiar golden brown color of baked goods.

Baked goods made with little or no sugar do not brown like recipes made with sugar.

To help achieve a more golden brown color when baking with SPLENDAŽ Granular, lightly spray the batter or dough with cooking spray just before placing in the oven.




Bake times

Your baked goods made with SPLENDAŽ No Calorie Sweetener may bake more quickly than those made with sugar.
  • Cakes: Check 7-10 minutes before the original recipe's expected bake time.
  • Cookies, brownies and quick breads: : Check 3-5 minutes before the original recipe's expected bake time.
Storage

Sugar acts as a preservative, helps retain moisture, and keeps baked-goods fresher longer.
  • All fresh baked goods are best eaten within 24 hours. If you want to keep your baked goods made with SPLENDAŽ No Calorie Sweetener, Granular longer, wrap well and freeze.
  • For canning, SPLENDAŽ No Calorie Sweetener, Granular does not provide preservative properties. However, it is heat stable and can be used as a sweetener in canning.
Canning
SPLENDAŽ Brand Products are heat stable and can be used as a sweetener in canning and in making jams and jellies. However, SPLENDAŽ Brand Products do not provide the preserving properties of sugar, so proper canning techniques are essential to avoid spoilage and to achieve successful results. Once opened, these homemade goodies must be stored in the refrigerator and used within one month, to minimize any spoilage from natural airborne bacteria.



USING SPLENDA Sugar Blend FOR BAKING
Substitution
When substituting SPLENDAŽ Sugar Blend for Baking for sugar in recipes, use half the amount of SPLENDAŽ Sugar Blend for Baking as you would sugar. One-half cup SPLENDAŽ Sugar Blend for Baking equals 1 cup of sugar in sweetness.




Chocolate or Butter
When combining SPLENDAŽ Sugar Blend for Baking into melted chocolate or butter, a few teaspoons of milk will help maintain a smooth texture.



Cakes
Combine all dry ingredients together in a large mixing bowl. Cut the fat into the dry ingredients before adding the liquid ingredients. This will reduce the amount and appearance of air tunnels found in the cake after baking. Also, when baking cakes, switching from 9" round pans to 8" round pans with 2" sides will help achieve a better rise.



Yeast Breads
Yeast breads rise well with SPLENDAŽ Sugar Blend for Baking. There is enough sugar present to feed the yeast, hasten fermentation and aid in the browning of the bread.



Caramel Sauces
When heating SPLENDAŽ Sugar Blend for Baking alone to melt or caramelize, it will dissolve more readily with the addition of a small amount of water. Saucepan caramelization happens more quickly with this product compared to pure sugar, so watch the process carefully so that it doesn't overheat or burn.



Cookies and Spread
Cookies may spread less when using SPLENDAŽ Sugar Blend for Baking. To help achieve a better spread, you may press and flatten the dough gently with fingertips or fork.



Storage
Baked goods made with SPLENDAŽ Sugar Blend for Baking will stay fresh for 24 hours, when stored in an airtight container at room temperature. If you wish to keep your baked goods longer, wrap well and freeze.
