Any carrot lovers? Need ideas.

A relative gave us a bag of fresh carrots and even though I hate them they are beauties! I have a few ways I cook them but I'm hoping someone can give me some other ideas.

I either:
roast them
simmer them with savory seasonings and add a pat of butter at the end
simmer with butter then in honey for the last several minutes
put them in a soup or stew (it's already too warm for either of those now)
or of course occasionally I'll cook them with a roast

The youngest only eats them raw and Hubs only eats them cooked. No one else likes them. Any suggestions would be appreciated!

I HATE carrots! I always wanted to love them though cause Bug's Bunny did. That said, I fell in love with Chick-Fil-A's carrot & raisin salad. It's like a carrot slaw & it's sooooo good!

Glazed Brown Sugar Carrots

• 16 ounces baby carrots, or sliced carrots
• 2 tablespoons butter
• 1/3 cup brown sugar, packed
• 1 cup water
• dash salt
• pepper, to taste

In a medium saucepan, combine the baby carrots with remaining ingredients. Stir to blend ingredients. Bring to a boil over high heat. Reduce heat to medium and continue boiling (uncovered) for about 20 to 25 minutes, or until carrots are tender and the liquid has evaporated.
Serves 4 to 6.

We love carrots here. Found this recipe online since I usually wing it and don't measure anything. Super easy and yummy!

Shoestring fries (these are so good)

ingredients:
10 trimmed, peeled carrots
3 Tbsp canola oil
1 tsp sugar
1 tsp salt
1/4 tsp pepper

directions
1. Cut carrots into long, thin slices. Toss with oil, sugar, salt, and pepper. Spread in a baking pan. Cook at 425°F for 20 minutes or until crisp and golden.

I have a delicious recipe for carrot bread. It's a quick bread, and you really don't taste the carrots in it. LMK if you'd like it.

I love them roasted till they are a little caramelized and yummy. Or raw. That carrot salad looks good too. I like carrots though
