    CHAT Mashed Potatoes - Ricer

I just received my new potato ricer from Amazon today. It may seem like a silly gadget to some but I imagine that others will swear by it. DH and I love homemade mashed potatoes, I only use instant in a pinch. I believe it will also come in handy for sweet potatoes and homemade applesauce.

I have always used a mixer to mash potatoes. When I have a burner available on the stove that gets hot enough (the two back burners don’t get hot enough) I simply boil, drain, and mash. When I can’t boil them on the stove I microwave steam them in a Ziploc Zip N’ Steam bag.

I would love to hear everyone else’s methods for making mashed potatoes; I bet there’s tons of varieties. I’m especially interested in methods and tips from people who use a ricer. Do you peel your potatoes or leave them on? If you leave them on do you do it because you want peels in your potatoes, or is it just a time saver and you have a tip for mashing that leaves the peel behind? Do you use the fine or coarse press plate?

If you don’t use a ricer that’s OK, I’m still interested in how you make yours. How do you cook them? I hate having to buy steamer bags, but what other options do I have when I can’t cook them on the stove. I’ve tried steaming them in the microwave in just a glass bowl covered with plastic wrap, but the result was not good.

If I am using a ricer, I take the peels off because I might have broken my last ricer by pressing too hard with the skins on the tatoes. whoops. If I am mixing with a masher, I leave skins on because I love skins.

The way I do it with the ricer is - boil the potatoes, add back to still hot pan to dry just a touch. Then I go ahead and rice in batches. After all of the potatoes are riced, I add salt and pepper and hot milk and butter and stir gently to combine. Then they are done and delicious!
