    OK...here's Mom's recipe:

    Sour Cream Coffee Cake

    Mix together in a large mixing bowl on medium speed for 7 minutes:

    1 box yellow cake mix
    4 eggs
    1/2 cup oil
    1 box vanilla instant pudding mix
    1 cup sour cream
    1 tsp vanilla

    Mix together until crumbly:

    1/2 cup brown sugar
    1/2 tsp cinnamon
    1/4 cup chopped pecans
    1 T. flour

    When cake batter is mixed together, pour half of it into a well-greased bundt pan. spoon filling on top of cake batter. Add remaining cake batter. Bake at 350 for 50-55 minutes.

    You can glaze it with a thin white frosting...but it doesn't need it!

    It is a fun trip down memory lane -- recipes off cake mix boxes that have been so popular through the years. It has several variations of specialty cakes, along with Jell-o Poke Cake, cookies, bars and apple crisp. Especially helpful is that almost all of the recipe ingredients are stockpile items!

    The Cake Mix Doctor is another source. She's got several books. I've got one or two of them and should dig them out. She doesn't have that many recipes on her site, but does have a few. You can choose your cake mix flavor on the right side of the screen, since not all recipes on the site use cake mixes.

    Re: the tuna. Someone else mentioned (sorry I've already forgotten whom) this but I also love to make it with macaroni or tri-color twists. My mom always made it with macaroni when we were kids but we'd have it on white bread - it was practically a macaroni sandwich but it filled our bellies cheaply. (Oh, Melli, I've been meaning to tell you there is a restaurant near here that's called Melli's Happy Bellies! Always makes me think of you. )

    Anyway, I've been wanting some and have been meaning to make it for the past 2 days. Problem is I love it and I eat too much of it!!

    Just use however much tuna you wish, mayo, a little mustard if you like, sweet and/or dill relish (or use pickles if you prefer), finely chopped celery, onion or green onion, boiled eggs if you like (I dice them super fine so you don't see them but they add a richness you just don't get without them), add the pasta and whatever seasonings you wish. Chill well and serve!

    Re: the hamburger. One of the simplest things and most tasty thing you can make is hamburger hash. Just use however much hamburger you wish with peeled, diced potatoes (use a non-stick pot!) and some chopped onion, and cook it together with your preferred seasonings til the potatoes are tender. Red potatoes work well because they are waxy and hold their shape very well. I know it sounds impossibly dull but my family just LOVES it. And it's adaptable - use more potatoes or meat depending on your situation. After it's done Hubs likes to put salsa over his and I always shred sharp cheddar or Monterey Jack over it. It's really good with refried beans; sometimes my girls put it in tortillas but that's carb overkill for me.

    Second, you can make non-Italian meatballs and cook them in a brown gravy (you can make it from cream of mushroom soup, Worcestershire and some milk). Simmer til meatballs are tender and serve over rice or egg noodles.

    Third, now this is a pretty unattractive dish but it is good and filling and similar to the thing above. Take hamburger and some finely chopped onion and cook. Add some cans cream of mushroom soup, Worcestershire and your favorite seasonings, cook for a while on low and serve over rice or egg noodles.

    You could make enchiladas with hamburger. Or brown some with onion and bell pepper, add some rice and broth and your favorite seasonings and cook til rice is done. Kind of like a rice dressing.

    Finally (for now anyway), this is also something my Mom used to make. Potato-burgers. She would take potatoes, peel them and shred them, then do all she could to remove excess moisture from them. Then mix with the hamburger and fry them. I bet it sounds pretty weird but they were good, if different.

    We've been making tuna melts. Make your regular tuna salad then put it on toasted bread or English muffins that have been lightly buttered. Pile it high. Top with a slice of tomato, a slice of cheese then put in the oven until the cheese melts. Only takes a few minutes. I use a piece of foil on a pan for easy cleanup.

    For ground beef, cook it, mix with gravy and whatever vegetables you like, put in a casserole, top with mashed potatoes, cheese if you like, and heat through in the oven.

    Make it into a gravy. Crumble and brown. I add an onion and some celery, chopped. When browned and the veggies are cooked through, add enough flour to coat. I use sweet rice flour but regular flour works fine. Then add your liquid. Either beef broth or milk. Add it slowly, stirring it through and cooking it down until you get the texture you want. Serve over toast, mashed potatoes or rice.

    For a yellow or white cake mix... Empty a couple of small cans or a large can of cherry pie mix into a 9 by 13" cake pan. You could also use canned peaches or fruit cocktail, drained. Dump the powdered cake mix on top and then top with a cup of melted butter or margarine. Just drizzle it on. There can be bare spots. It will still bake properly. Bake at 350 for about a half an hour until the top is lightly browned.

    We make this too - I think it's called "dump cake" but we call it "ugly dessert." LOL One of our favorites is to use a spice cake mix with apple pie filling. Now that really makes the house smell great.

    We also like to put apple pie filling in half the pan and cherry in the other, then use a yellow cake mix over all. Hey, I wonder how a chocolate cake mix over cherry pie filling would be like?? Sort of like a black forest thing? Hmmmm.

    I love the parts that get crunchy after it has sat for a few minutes.

    We make hash all the time, too. You can also use any veggies you have on hand. Celery, corn, peppers, peas or carrots are all good additions. We've even made it with greens like kale or Swiss Chard and it was delicious. Whether you add veggies or not, a big bunch of chopped parsley or cilantro mixed in at the last minute is a tasty addition.
