    i have a surplus of potatoes i got with coupons. now, the plan is to freeze them for fries (cut accordingly of course)

    now, what is the best way to do this?

    I do this a lot when the deals are unbeatable on potatoes

    This is what you need to do.

    1. Scrub (Peel if you desire)
    2. Put about 4 potatoes into pot of boiling water, keep water boiling. Leave them in the pot for about 4 min, then remove and immediately immerse into ice water (I keep the sink filled with water full of ice cubes). Once cool, let dry completely.
    3. Cut up into shape desired.
    4. Toss them in a bag with a small amount of olive oil (prevents sticking when placed in a bag to freeze later)
    5. spread them out on a cookie sheet and flash freeze (about an hour or so)
    6. Vacuum seal them in bags or place in freezer bags, until ready to use.
    7. Let them come to room temp before cooking.

    Repeat until all potatoes are done. They say no more than 4 to a pot so that the water temp doesn't drop.

    If you are going to make french fries with them anyways...save yourself a couple of steps. We used to do this at the restaurant when I was executive chef.

    Cut potatoes into the fries.
    Par fry them (250 degree oil) until just before they start to color.
    Spread them out on a baking sheet in a single layer and freeze for an hour.
    Separate your fries and place in a ziplock bag. Squeeze all the air out and then stack the bags in the freezer.

    Ahh, good way to do deep fried potatoes!

    I usually cut mine up into wedges for baking with spices and grated cheese. I also chop them up to make home fries in the pan. We don't do much with fried type foods but that's an excellent way to shorten that process for those who do!!
