    Default Does anyone eat the Pizza Lunchables? If so - homemade versions?

    I have a ton of the little Lunchables in my fridge, after the 55¢/1 Oscar Mayer Product coupon, I got a lot for free to 45¢. My daughter loves the Pizza Lunchables. Ok, ok, so do I.

    Here's the thing - once the cheap ones are gone, even at $1 I'm not going to buy them all that often. Especially because I have to "doctor" them for her (add mushrooms and onions to her pepperoni pizza ones) and for me (use a different pizza sauce and extra cheese to my cheesy pizza ones).

    So they'd be easy to make, if I could find a substitute for the crust. I've never bought anything like them. I've made pizzas on just about everything - flat wraps, pita pockets, english muffins, pizza sandwiches (bread with the pizza fixins in between, grilled or in a panini press), mini bagels, you name it. I love those silly little round crusts you get in the Lunchables.

    Anyone have a recipe suggestion for something that would turn out similar, that I could maybe make in batches and keep in the fridge or freezer? :)

    Have you tried Boboli or similar? I bought whatever brand Winco sells...Mama somebody or other. My husband liked it.

    When we lived on Cape Cod we would often take weekend trips to PA to see my inlaws. I made little pizzas to take in the car to eat cold on the way there. I bought Rhodes or similar frozen rolls. I would use my fingers to pat and pull them out into flat little circles (would be smaller than the Lunchables), let rise then reshape to make flatter still. I put a little edge on them. I topped them with sauce that I made but I have since found jarred sauce that I love. Then cheese. I added meat to my husband's. Then I baked them.

    If you like the concept of the Lunchables with the unmelted cheese (I don't), you could bake up the crusts using the rolls or even just bread dough portioned out and rolled flat. The crusts could be kept in the fridge or freezer.

    Oh definitely not unmelted cheese - our Lunchables get made and popped into the microwave for 30-40 seconds, heh. The cheese MUST be melted, and cold pizza is not my idea of pizza. :D

    I have tried Boboli. The smallest they have is pretty large, though.
    Maybe I just need to keep dough in my freezer.

    I have found 2-pk. of pizza crusts at of all places, lol Dollar Tree. A 3-pk of crusts was almost 3.00 at Walmart so I thought this was a great deal and they ate it up. I didn't like it, lol but I don't like pizza much these days.

    This is a great idea, because I don't buy Lunchables unless they are free...
    But I never thought of making my own kits. I think might try it.

    I would take my favorite pizza crust recipe that I make from scratch, and roll it out thinly. They I would cut out rounds using a large cookie cutter and bake them.

    I might store in the freezer, and have some homemade sauce available with some other toppings.

    You could use a ready made pizza crust and cut it into smaller circles with a biscuit cutter, or you could take biscuit dough and flatten it out to mini pizza size and add toppings the bake. You could also make your own pizza crust, roll it out, cut with a biscuit cutter and then bake to have your small crusts.

    I know our Trader Joes and Safeway stocks pizza dough in the cold section already made. You can always ask your favorite pizza place if they will sell you the dough. Marys Pizza Shack here in town I am able to buy dough from them from as well.

    I have used these specialty crackers in the cracker aisles... they are small and round similar to the lunchables.. If I find the box in my pantry I will give you the name exactly.
