I had a boatload of Betty Crocker scalloped potatoes that have gone looong past their date. I discovered that although the potatoes are fine, the cheese sauce mix is almost completely flavorless.
I am also trying to avoid many prepackaged mixes, so even if the sauce was good I don't want to use it anyway.
Now I realize that I could just make a bechamel and add some cheese, but where's the fun in that?
What would you do with about 20 boxes worth of sliced, dehydrated potatoes?

You can always add them to soup or stew. There might be a way they could be used for potato soup but not sure what to do on that.

you can put in soups or stews
try to rehydrate in water and then you could saute/fry them
try to rehydrate and put in foil with onions on the grill
