    Default Help! Recipe crisis.

    I need some ideas for food.
    It's that time of the month again where I'm left with hardly anything to eat.
    I need to make...something. Even if I make for lunch, dunno about dinner or food for the next 4 days. oy!

    Main things I have (but very super limited)
    small red potatoes that my neighbor gave me (maybe about 10 or 15)
    a small box of frozen peas
    a couple boneless frozen chicken breast (would like to save for dinner somehow)
    a tad bit of few types of diff pasta
    rice
    MAYBE a red onion (ill have to check if its still good)
    cream cheese
    shredded mozzorella cheese
    cream of chicken
    balsamic vinegar oil
    a few types of salad dressing/marinade
    canned sliced peaches
    ritz crackers
    .........

    Thats about all I have.
    What can I make with that?
    Before you suggest things I DONT have
    butter
    olive oil
    eggs
    milk
    american/cheddar cheese
    sugar
    bread crumbs
    any tomato products (ie: tomato paste, sauce, diced tomatoes..etc etc)
    don't have any salad ingredients (ie: tomato, cucumber, lettuce..etc etc)
    and no other meats (not even lunch meat ie: bologna, hotdogs, turkey..etc etc)

    So.....any suggestions??
    Oh, and I dont have the money or products to grill out.

    Do you have a crockpot?

    One meal I do frequently is cook chicken breasts in cream of chicken soup in the crock pot and serve over rice. Yummy and very tender. No other seasonings needed.

    well, I see a possibility for a nice unique "jambalaya"

    I would use some of the salad dressing (very small amount) if you have some version of italian, the oil will serve as the cooking agent.

    In a pan, toss in cut up red potatoes (cubed), let them cook on low/med for about 10 minutes, stirring periodically. then add the cut up chicken breast, and when that is done cooking, toss in the green peas and heat through.

    Have pasta precooked, and add that to the mix and stir to combine. Keep on warm and serve right from the pan.

    If the onion is still good, use it! That will add some zip to the flavors.

    How long should I let it cook in the crockpot?

    Pasta and potatoes in the same dish? hmm
    Cook the potatoes w/ the [i have zesty italian] dressing?
    If onion is still good, when should I add it?
    I forgot to mention I have corn, could I possibly use that instead of peas? lol

    I do mine from frozen, I put them in the crockpot before I leave for work in the morning and they are done when I get home at night (on low). As long as it is on low it can cook for a long time without hurting anything.

    Yes, jambalaya often has rice/pasta/potatoes in them. (any combination).

    You could add corn instead of peas or both

    Zesty italian would be perfect, just use a small amount, you mostly want it for the oil for cooking purposes.

    Onions need to be added toward the beginning, I would put them in when I put in the potatoes so they have time to cook down. Potatoes take the longest to cook of all the ingredients so that's why I put them in first, let them cook almost completely before adding chicken and so forth.

    You could make a soup also..peas,corn,onion,pasta,red potatoes and a pice or two of the chicken you have,salt, pepper... you could a few times off this.


    balsamic vinegar oil,pasta and a little bite of chicken..maybe even add a little of the peas

    With 1 chicken breast, some rice, peas and some onion I would make chicken and rice.

    Dice the chicken breast (easiest when still partially frozen) and cook along with the rice, some diced onion and peas.

    With another chicken breast (COOKED first, either poach or bake), pasta and cream cheese you can make Noodles Parmesan with chicken. Recipe on this site under Recipes, Pasta. Just skip the Parmesan cheese and butter, I don't use the butter anyway. You can also make the Noodles Parmesan with no meat. All you need is the cream cheese and pasta.

    You can put some chicken in a pan, pour cream soup over, crush some of the crackers and put over soup and bake, covered, til chicken is done.

    Or put chicken in a pan, pour cream soup over, bake, covered, til chicken is done, top with the shredded mozzarella and bake a few minutes more til melted.

    You don't have to leave the chicken breasts whole, you can cut into chunks and it will cook very fast and will seem like there is more chicken.

    After re-reading your post, I realized you may not have all of the items for this-but keep it in mind for the future.


    You could do a BBQ Chicken Pizza with Shredded Chicken to make the chicken stretch. You can google homemade pizza crust recipes and you will probably have most everything on hand to make one. I know most people have BBQ sauce in their fridge too.

    When I make this-we are able to get 2-3 meals out of this using 1 pizza crust, some bbq sauce, 1 finely shredded chicken breast and some mozz. cheese.
