Should I stock up on corned beef? is 1.99lb a good price? what are all the ways to cook and eat corned beef?
I've never bought or cooked corned beef and would like to give it a shot this year.

Is the $1.99/lb the point cut or the center cut flat? The point cut is fattier than the center cut and is usually cheaper also. As to stock up price, I'm not sure.

I think $1.99 sounds like a good price to stock up on. We love, love, love corned beef and it's so easy to make. I just put it in a large stock pot filled with water and add the season packet they give to the water, then cook for like 3 or 4 hours. It falls apart and is delicious. I serve it with prepared horse radish and they love to see who can eat the most horseradish. You can add carrots and potatoes at the end of cooking in the pot to boil as well so you have your whole meal in one pot.
I can't wait to see how others cook it.
Here is a recipe I make w/the left overs
Corned Beef and Cabbage Chowder
1 to 1 1/2 cups leftover diced corned beef
2 cups leftover diced potatoes
1 cup leftover diced carrots
1 cup leftover diced cabbage
1/2 cup chopped onion
1 cup corn
1 cup chicken broth
2 cans (10 3/4 ounces each) cream of potato soup
1 cup half-and-half or whole milk
salt and pepper, to taste
In a 4 to 6-quart slow cooker, combine the corned beef, potatoes, cabbage, carrots, corn, onions, chicken broth, and cream of potato soup. Cover and cook on LOW for 4 to 5 hours, stirring about halfway through cooking. Add 1 cup of half-and-half and salt and pepper, to taste. Cover and cook for 25 minutes longer. Add more milk or more half-and-half to thin slightly, if desired.

1/4 cup minced onions
2 tablespoons butter
4 to 5 cups cooked chopped corned beef
4 cups diced cooked potatoes
1/2 teaspoon pepper
salt and pepper to taste
Sauté onion in butter until tender. Mix with corned beef, potatoes and pepper. Mash together until well mixed.

I am so excited about this thread. Just 2 days again I bought at Acme a 4 and 1/2 pound corn beef brisket flat cut, and I paid .99 lb. I have no idea how to cook it and do not like cabbage. I was going to put it in the slow cooker...any suggestions?
I mix a jar of stone ground mustard with a 1/2 cup of brown sugar and smear it all over the corned beef. Cook it in the oven at 350 degrees for 2-ish hours (depending on the size). It falls apart. It's not chewy like some boiled corned beef can be. I also try to get one that is not very fatty, or trim a lot of the fat off before cooking it.
I hate boiled meat, so for a long time, I wouldn't go near corned beef.
This year, I can't wait to stock up. We buy it now when it's cheap and eat it for the rest of the year at family gatherings.

I want to know where ya'll are finding corned beef so cheap. The lowest price I've seen in central fl is $2.39/lb. And that's for the St Patty's day sale, the week before it was $4.XX/lb. I do the traditional corned beef with cabbage/carrots and taters. Put it in the crock pot with a bottle of Guiness (sp). Any dark beer will work though. I've also made a mustard glaze and done it in the oven, and I've grilled it. Very tasty stuff.
