    CHEF What's for dinner tonight??

    I'm hoping to get some new ideas!!

    We had Wacky Mac with basil pesto (fresh basil, pine nuts, parm cheese, olive oil) with a can of tuna mixed in. Oh, and I squirted a little bit of Italian dressing in there for some zip.

    Super quick and very good!

    Tonight was cereal! It was one of those days.

    But I had taken some on sale hamburger meat and made 8 quarts of a spaghetti sauce that was out of this world. Might still cook some noodles and have that, but it was definitely cereal for the kids.

    One of my freezer doors was opened and I had to sift through and toss a bunch of stuff. That put an end to cooking dinner tonight!

    I have had that happen to me twice and to keep from throwing away meat, I cooked it all. Talk about a long, hot day. It has never happened again.

    I had Chicken breasts cooked in salsa with onions, peppers, and cheese on top.

    Chicken and Sauce in the crockpot over noodles and I made some frozen corn. Gotta love the crockpot on those warm days! :)

    I ordered takeout Chinese, but now I have a bellyache. DH is away in Boston for 2 days and I rebel about being left at home by not cooking dinner while he's gone. If he's going to not have to cook, then I don't want to either!! LOL

    I don't know the name of it, but I followed my SILs moms recipe for crockpot chicken. 2 cans of Golden Mushroom soup mixed with 1 1/2 to 2 cans of tomato soup. Mix in a little water to thin it out, a half cup Creole seasoning (comes in a little container in the grocery store, or you can chop your own: onions, bell pepper, celery & green onions) and add whatever spices you have on hand. I use a little bit of Tony Cacheries, Old Bay, Garlic Powder, Lemon Pepper, Emerils...seasonings along those lines. Then add chicken. This time, I used boneless, skinless chicken thighs and bone in skinless chicken breasts. Cook on low 6 - 8 hrs.
    I pulled the breasts out when they were cooked and deboned them and shredded the meat a bit. Serve over egg noodles.
