when I actually had room in my freezer, I would make mashed potatoes, twice baked potatoes, potato skins, fast food burgers, breakfast sandwiches (thanks to Cook To Save with Assembly Line Cooking and a really sweet poster here).
I also grill extra chicken and dice - then freeze in little baggies for my son to nuke and throw in his salad. I cook my ground beef/chicken also - makes it easier and less messy for him to make tacos or hamburger helper.
I also make up my own meatballs and burgers - freeze them raw and cook from frozen state (just throw the meatballs in the pot/slow cooker w/the sauce). I make my stuffed shells and then only take out as many as I want or need.
I generally freeze most things on cookie sheets and then transfer them to baggies - makes it easier to take out what I need.
Chili, I love chili but I make mine pretty different from the norm, so that's one reason. Chili's not tough to make but can be time consuming. Ditto pittsburgh24, on the meatballs, though I don't make them all that often. I used to do a ton more freezer cooking, now that hubby has 2 jobs & I'm unemployed, it doesn't make any sense to do freezer cooking as we never actually eat a meal together :(.
My Wish List! I shop at Shaw's, CVS, Rite Aid, Market Basket & Super Walmart!
I'm a big fan of Seal-A-Meal bags. Drop the frozen bag in boiling water and voila!
chili
spaghetti meat sauce (use just with noodles or layer with lasagna noodles)
chuck roast with gravy
roast chicken parts with broth or gravy (great for a quick meal with rice or noodles)

I use 2-3 meats in my meatballs, so when I make them, it has to be in bulk. I bake them and then freeze.
Triple batches of soup and freeze baggies for quick easy lunches. I usually do a triple of chili when I make that as well.
I did the twice baked potatoes thanks to jane4girls posting it on her blog LOL and we are still working on those.
I also buy veggies in bulk and freeze them.
I bought a 50lb bag of potatoes for $17 instead of the $2.99 my stores want for 5lbs and cut up tons of fries. flash froze them, then bagged them for quick and eay fries.
I buy "sauce tomatoes" from a local produce place, make a basic sauce and freeze that to use for soups, chili or pasta sauce.
When I get a good deal on peppers and onions, I chop those and freeze them for easy cooking later as well.

I just made a gallon and 1/2 of spaghetti sauce and froze for later use.
I freeze beans. Any type of dry beans that need to soak overnight and cook for several hours; I make in bulk and then freeze. It saves time and money because the dried beans are usually cheaper than canned (unless there's a hot coupon).
Sometimes I will freeze rice in this way too, especially if it's long grain wild rice or brown rice which can take 45 minutes to cook. The rice needs to be re-hydrated with some water added during heating once thawed (unless you're using it in a soup). And in the summer time who wants to run the stove that long everyday?
Currently in the process of moving and.
I won't be around much.
I also always have beans in my freezer. Everything is seal-a-meal bags.
