My favorite resource is recipezaar, just type in the search OAMC (once a month cooking) and whatever you may have to cook with-for example oamc chicken, you'll get a long list of recipes that cover the cooking, freezing and reheating for the meals plus the recipes are rated by people who have tried them so its easy to see which ones people were really pleased with. Once you have meals frozen it is so nice to just pull something out and pop it in the oven-less hassle, less prep, less cleaning.

I don't do the whole mass cooking in one day thing. But I try and double or triple some things as I am making them, and then freeze, in portions that we need for later. I try and do this with:
    Meatballs
    Meatloaf
    Ziti
    Chili
    Soup
    French Toast
    Pancakes

Also when I get a good deal on steaks, I pour the marinade in the ziplock with it and freeze it, then while it's defrosting it is also marinading and when it's thawed it is also ready to be tossed on the grill or in the oven.

I do this with chicken. 3 or 4 chicken breasts, a bottle of free salad dressing or marninade and a bag. It's the easiest and one of our favorites. If it's one that I know we like, then I'll make double and chop it up on a salad the next day, put it in a wrap the next.

One of our favorites is a mixture of 1/2 hot sauce (like Franks) and 1/2 italian dressing. We make mexican pizzas, wraps taco salad, chopped chicken salad, quesadillas. When I have a flavor like this where I want each bite to have some flavor, I'll slice the chicken as opposed to a whole breast.

Go to the Taste of Home website and type in "freezer" in the search box and you will get several recipes. Also recipezaar.com if you type in "OAMC" you will get lots of recipes too.

I just got a Taste of Home mag at the checkout counter (not the normal monthly mag) called Busy Family Recipes it has 10? really yummy looking freezer meal recipes in it.

I have several freezer meal/OAMC cookbooks all have good recipes:

Once A Month Cooking by ? (its in storage...sorry don't know the author)
    Frozen Assets by Deborah Taylor-Hough
Freezer Friendly Meals by Holly Clegg
