    CHEF I need raw vegetable recipes (looking for "wow!")

    We've been spending a lot of time with my husband's brother and his wife lately. And most of the time, it's at my house. We share the cooking...sometimes she does it all, sometimes I do it all, sometimes we put a meal together between the two of us.

    My BIL does not like cooked vegetables...and he doesn't like mushrooms at all. He says it's a texture issue. He likes raw vegetables, though. I'm tired of serving tossed salad, cole slaw, and veggies with dip (although...if you've got a really good dip recipe, I'd love to see it!!). I was thinking of serving some sort of marinated veggies, but I don't have a recipe. Yep, I could google it, and I did! But I want something tried and true!!

    So...can anyone help me out? They're coming over for dinner (ribs) on Saturday...but this will be an ongoing thing, since we dine together a lot. When someone eats at my house, it's my mission to make sure I serve something they want to eat!

    Italian Salad. Diced Cucumbers, Diced Tomatoes, Very thinly sliced Red Onion, Sliced Black Olives, and Mozz Cheese(block diced, or the fresh diced, could use shredded, or could leave out completely). Then use just the powdered italian dressing mix(that you use to make the bottled stuff) and sprinkle it on top, stir, let it sit for an hour or so in the fridge(no more than 4), stir again before serving. I can find a better "Recipe" later, but I got it from Chitownmelli, and she doesn't give measurements.

    You could also do a tomato, onion, mozzerella salad with a balsalmic and olive oil dressing.

    I've had this but instead of Mozzeralla cheese we used Fetta

    My family loves Broccoli & Cauliflower Salad

    Chop Brocc/Cauliflower Mix with 2 cups shredded Cheddar Cheese and 1 pack of Bacon Recipe bits. In separate bowl, mix 1/2 cup mayo, 1/3 sugar, 1/3 vinegar and then pour over top of salad mixture. Refrigerate! YUMMY

    yeah I don't do measurements on that salad, I just do "what looks right" :P

    We like these salads for a change of pace. Don't remember where I got the cucumber salad, but got the parsley salad from Alton Brown. If you aren't that wild about parsley, you can mix half salad greens with the parsley and it will still taste great.

    Lebanese Yogurt and Cucumber Salad
    3 cups yogurt
    12 fresh mint leaves
    2 cloves garlic, peeled
    Salt to taste
    2 or three cucumbers, peeled and thinly sliced

    Drain the yogurt in a cheesecloth-lined colander for several hours, discarding the liquid (whey) that has collected – or use it in a bread recipe. If you don’t have cheesecloth, a paper towel works fine.
    Place the mint and garlic together in a small bowl and crush with a little salt. Add the drained yogurt and cucumbers. Mix and chill before serving.

    Parsley Salad

    4 ounces (about 2 quarts) Italian parsley
    2 tablespoons fresh lemon juice
    2 tablespoons lemon zest
    6 tablespoons walnut oil
    2 teaspoons dark sesame oil
    1 teaspoon honey
    Salt and freshly ground pepper
    3 tablespoons toasted sesame seeds

    Wash and dry the parsley. Pick the leaves and set aside. Discard the stems. (Or use them in soup.)
    In a large bowl, whisk together the lemon juice, zest, walnut oil, sesame oil, honey, and salt and pepper, to taste. Add the parsley and sesame seeds and toss to combine. Allow the salad to sit for at least 30 minutes before serving so that the flavors meld.

    Found this here: Cucumber Salad Recipe (Uborka Saláta)

    Have not tried it yet.

    Hungarian Cucumber Salad
    • 3 cucumbers
    • 1 large onion
    • salt
    • 1 cup sour cream
    • 3 tablespoons vinegar
    • 2 tablespoons water
    • freshly ground black pepper
    • paprika
    1. Peel cucumbers and slice both cucumbers and onions very thin.
    2. Place in a large bowl and salt generously. Allow to marinate for about 1 hour.
    3. Grab handfuls of cucumber onion mix and squeeze as much water out as you can.
    4. Whisk together sour cream, vinegar, water, and freshly ground pepper to taste. Stir into cucumber mix.
    5. Serve immediately or refrigerate to mellow. Sprinkle paprika over top for presentation if desired.

    Slice a cherry or grape tomato in half slide one half onto toothpick, then a leaf of basil, and then mozzarella cheese, or feta if you prefer, then basil and then the other half of the tomato. Looks very festive and tastes yummy.

    We also like, raw cauliflower, raw broccoli , and black olives , pour Italian dressing over them, and let marinate overnight. YUMMY

    ETA: Also if you normally just do the standard dill or onion dairy based veggie dips try something different like hummus (which can be all different flavors--roasted red pepper, garlic, etc) or baba ganoush or white bean dip for dipping veggies. Texas Caviar with corn chips is pretty good too.
