I need raw vegetable recipes (looking for "wow!")

Thanks everyone! After I posted this, I found out that my BIL not only doesn't like cooked veggies, but he has "texture issues" with lots of foods. Unfortunately, this means that the only safe thing I can serve when he's here is a tossed salad. His wife told me that she has a hard time finding things he'll eat too. Hey...at least I tried, right?

XU - Personally, I'm glad you're off the hook. I understand people have issues with food but I wonder if some of his would miraculously clear up if he had all the responsibility for finding stuff he'd eat.
