    CHEF Cooked Potatoes

    Need some help!!!!

    Last night DH's MCL group did a corned beef and cabbage dinner and DH brought home a huge pan of boiled potatoes home. Last year their dinner was 2 days before their monthly meeting and dh was in charge of bringing chow and made a huge potato soup to use up all the taters.

    This year their meeting isn't until next Monday, and I don't think we want to make the soup and keep it in the fridge for a week and being milk based I don't think we can freeze it for a couple of day. He actually brought in food last month, but with all these potatoes, we're going to call the man for March and tell him that we've got it covered.

    So a couple of questions -
    could we freeze the cooked potatoes just as they are until next weekend and he can make the soup next Monday?

    or is there some other potato recipe idea that we could make today and freeze it for a week.

    Chow for the meetings vary by who brings it in - last time we made a beef stew, sometimes members bring in venison stew, baked beans, corn on the cob, clam chowder, Swedish meatballs, crockpot stuff is always the easiest so they don't have to run the oven down at the club.

    Any help would be great!!

    oh, and I should probably add that the potato may have a twinge of either corned beef and cabbage flavoring - I don't think they cooked it all separately.

    So with that, I'm swagsbucking for recipes and I'm thinking potato cake would be kinda weird with the slight beef/cabbage flavor.

    ooh - maybe Irish Egg Rolls Irish Egg Rolls Recipe - Allrecipes.com

    what do you think about me cooking them tomorrow and then freezing them for the week - although it's not ideal, it wouldn't be the first time that they've had to warm something up in the oven during their meeting

    I never believe in following a recipe exactly and always add my own touch. But I found this for a OAMC and thought you could alter it and add Ham to it..which could replace your Cornbeef or even add the cornbeef...and make a casserole of sorts.

    What about making a thick potato puree adding onions and chicken broth and freezing that? Seems like then you could thaw it and make soup by adding dairy products when you heat the puree.
    I make frequently make a Goulash Soup with onion, potatoes, green pepper, garlic, cabbage, tomatoes, chunks of leftover roast beef and some caraway seeds. Seems like a variation of that would freeze well and since cabbage is a main ingredient, the flavor in the potatoes wouldn't be a problem.

    If you make the eggrolls, I would add a touch of corn starch to the mixture you are putting inside. When you take them out of the freezer to reheat, there may be a bit of extra moisture and to keep them from getting soggy after the reheat the cornstarch can help tighten up any liquid that may form.

    or...

    You could definitely freeze the potatoes as is...I would probably dice and flash freeze, so they don't come out of the freezer as one big clump. Then you could make the soup up with the frozen potatoes.

    I have frozen twice baked potatoes, but you could make a similar casserole to freeze.
