    CHEF healthy and easy recipes?

    My family and I were eating out a lot. I've decided to make things better by cooking more at home, but I only make like 5-10 recipes over and over. I'd love anything healthy and easy.

    It has to be somewhat kid friendly as I have a 3 year old.
    Needs to be easy cause I have two month old twins.

    I'd just like to start being more healthy. Recipes in all categories are welcome, especially those that use items easily stockpiled, but I'm open to anything. Please give me your favorites!

    Breaded Healthy Chicken Nuggets

    This is a healthy version of an old favorite.
    4 Servings

    Ingredients
    3 skinless boneless chicken breasts
    1 cup Italian seasoned bread crumbs
    1/4 cup wheat ger
    1/8 cup milled flax seed
    1/2 cup grated Parmesan cheese
    1 teaspoon salt
    1 teaspoon dried thyme
    1 tablespoon dried basil
    1/2 cup butter melted

    Instructions

    Preheat oven to 400 degrees F (200 degrees C).

    Cut chicken breasts into 1 1/2 inch size pieces. In a medium bowl, mix together the bread crumbs, wheat germ, flax seed, cheese, salt, thyme and basil. Mix well. Put melted butter/margarine in a bowl or dish for dipping.

    Dip chicken pieces into the melted butter/margarine first, then coat with the breadcrumb mixture. Place well coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

    Healthy Chicken Chowder

    Ingredients
    1/2 c Shredded carrot
    1 c Skim milk
    1/2 c Chicken broth
    1/4 ts Black pepper
    1/4 ts Onion powder
    1 Potato; peeled, cut in 1/2"
    4 Chopped green onions
    1/2 lb Boneless skinless chicken
    2 cn (15 oz) cream-style corn
    1/2 c Shredded cheddar cheese
    1/4 c Mashed potato flakes

    Instructions
    Mix all ingredients except cheese and potato flakes in slow cooker. Cover and cook on low heat for 5-6 hours or until potatoes are tender and chicken is no longer pink, Stir in potato flakes and cook on high, uncovered for 5 minutes until chowder has thickened and flakes have dissolved. Top with cheese before serving.

    Vegan Veggie Soup

    Ingredients
    1 tablespoon Olive Oil for the pan
    ½ an onion diced
    2 cloves garlic minced
    2 stalks celery diced
    2 med. carrots diced
    3 cups vegetable stock
    1 can diced tomatoes
    1/2 cup of fresh basil
    0.5 tsp parsley
    1 cup pasta (any fun size)
    1 cup fresh Green Vegetable
    1 can Garbonzo beans (do not drain)
    1 can Kidney beans (do not drain)
    1 salt and pepper to taste

    Instructions
    Heat the oil on medium heat and add the onions until translucent.
    Add the garlic, celery, carrots and saute until soft (about 5 minutes).
    Add the tomatoes and vegetable stock. Bring to a boil and lower heat to a simmer.
    Add the basil, parsley and pasta and cook for 10 minutes.
    Add your green veggie and the beans. Cook on low for another 20-30 minutes. Add salt and pepper to taste.

    Healthy Potato Salad

    Ingredients
    2 md Potatoes; peeled and cut
    1 Hard-cooked egg; sliced
    1/4 c Chopped celery
    1/4 c Chopped bell pepper
    1/4 c Chopped onion
    2 tb Chopped pimento
    1 tb Mustard
    4 tb Lite mayonnaise

    Instructions
    Cook the potatoes in boiling water for 8 to 10 minutes until tender but still firm (be careful not to overcook!). Drain and cool. Mix all ingredients

    Healthy Coleslaw Recipe

    Ingredients
    1/3 c Plain nonfat yogurt; or
    1 tb Apple cider vinegar
    2 tb Honey
    2 c Coarsely chopped cabbage
    1/2 c Shredded carrots
    1/4 c Chopped green peppers
    1/4 c Finely chopped celery

    Instructions
    1. Combine yogurt, vinegar, and honey in bowl large enough to hold coleslaw. Stir until smooth and well blended. 2. Add vegetables and mix well. 3. Cover and chill for 15 minutes or longer before serving. Notes: prep time: 10 minutes; Chilling tine: 15 minutes

    Taco Salad (Healthy)

    Ingredients
    2 c Baked corn chips
    1 c Thousand Island Dressing,
    1/2 lb Extra-lean ground beef
    1 cn Kidney beans, drained
    1 ts Chili powder
    1 lg Head lettuce, chopped
    4 Tomatoes, chopped
    1/2 Avacado, sliced
    1/3 c Grated low-fat cheese
    2 tb Hot taco sauce

    Instructions
    Brown ground beef in a nonstick skillet. Drain off fat. Add beans and chili powder and simmer 5 minutes, Chop vegetables and put in salad bowl. Before serving, toss vegetables and grated cheese with bean/beef mixture and put in large salad bowl. Arrange corn chips around edge. Combine salad dressing and taco sauce to serve with salad.

    Scalloped Potatoes - Healthy Exchanges

    Ingredients
    9 cups shredded loose-packed frozen potatoes
    1 1/2 cups finely chopped onion
    1 can Healthy Request Cream of Mushroom Soup 10-3/4 ounce
    1 1/2 cups Carnation Evaporated Skim Milk one 12-fluid-ounce can
    1 cup + 2 tablespoons shredded Kraft reduced-fat Cheddar
    1/4 cup chopped pimiento one 2-ounce jar drained
    1/8 teaspoon black pepper

    Instructions
    Spray a slow cooker container with butter-flavored cooking spray. In prepared container, combine potatoes, onion, mushroom soup, and evaporated skim milk. Stir in Cheddar cheese, pimiento, and black pepper. Cover and cook on LOW for 6 to 8 hours. Mix gently before serving.
