    I was going to suggest sloppy joes. Good choice and very easy.

    Here's a bean salad that can sit out during the party and not spoil. I like to make this one when I go to potlucks or picnics since it doesn't have to stay cold.
    This recipe is for a big bowl. You can add however many veggies you want. I gave approximates of what you'll need.

    2 jars Randalls white northern beans (these are the glass jar beans) drained
    3 or 4 chopped tomatoes
    1 or 2 chopped green peppers
    1 med onion chopped
    1/2 C dried parsley flakes (maybe a little more - you want to be able to see the flakes)
    1 bottle minute maid lemon juice (this is sold in the frozen dept. by the cans of frozen juice concentrate. It's sold in a box and there's a squirt bottle inside.) OR you could use the juice of fresh lemons (probably about 6 - 8 lemons)

    Mix it all together and refridgerate until chilled or even over night. Making it ahead of time give it time for all the flavors to come together. If you don't have space in the fridge for the big bowl, you can just chill the jars of beans and then add them to the bowl and make. Stir it once in a while to make sure the lemon goes into allt he beans.

    Super Easy Appetizer Dip (It is like those pickle wrap thingys only in a dip)


    4 blocks of cream cheese (softened)
    1 cup mayo
    1 jar dill pickles chopped up
    1 Pkg. Buddig beef or ham (or any deli meat like that)chopped up

    I beat the cream cheese till fluffy, add the rest, and mix up


    Really yummy, serve with crackers, takes literally just a few minutes to make
    Raising children(especially teens) is like being pecked to death by a chicken

    In my defense, I will only bid human beings in the auction forum if it's a MM.

    It is better if you refrigerate it for a few hours before hand.

    Hi, sorry to take so long getting back to you...I forgot about this thread.

    Apple Snicker Salad

    5 Granny Smith Apples (unpeeled, cubed)
    (or you can do a mix of red and green, for Color.)
    8 oz. Cool Whip
    1 small box Instant Vanilla Pudding Mix
    6 Snicker bars, chopped
    1 Big size Hershey Bar

    Mix Cool whip and Pudding mix. Add chopped apples and Snicker Bars. Mix well. Grate the Hershey bar on top just before serving.




    Slushy Fruit Salad

    1 cup water
    1 cup sugar
    1 (6oz) container frozen Orange Juice concentrate, thawed
    1 (20 oz)can crushed pineapple, undrained
    1 (29 oz) can Fruit cocktail, drained
    1 (20 oz) can pineapple chunks, drained
    1 (29 oz) can pears, drained and cubed
    1 (29 oz) can peaches, drained and cubed
    2 (15 oz) cans mandarin oranges, drained
    1 (10-16 oz) jar of maraschino cherries, drained and cut in half
    4-6 bananas, sliced
    1 (14 oz) bag of coconut
    Optional: chopped pecans

    Make simple syrup, put water and sugar in pot and cook over medium heat until sugar is dissolved. Set aside and let cool. Pour oj concentrate in large bowl (I usually mix it up in a large stock pot), add crushed pineapple and mix well. Pour in cooled simple syrup. Add canned fruits and cherries, mix well. Add bananas, coconut, and pecans(if desired), mix in gently so you don't break up the bananas.
    Put fruit salad into freezer containers and freeze. Take out of the freezer and allow salad to get to slushy when ready to serve.

    It will depend on what size containers you freeze this in as to how long you need to take it how ahead of time. This makes alot but it is easy to make and its really good. We used to put the pecans in it but my Dad wasn't able to have them anymore so I stopped putting them in there since he loved this salad so much. My kids and I still eat it the way he did alot...still frozen when we just can't wait for it to get slushy.

    And I guess if you really wanted to you could use more cans of fruit cocktail instead of the other canned fruits but I like the larger chunks of the fruit and the fruit is firmer...fruit cocktail tends to be softer than the individual fruits.

    Here's another dip recipe that a friend of mine gave me...they make this every year for their Christmas party.

    Hurt Yourself Dip

    4 (8 oz) pkgs of cream cheese softened
    2-3 packages of Hidden Valley Ranch Dip Mix
    1 small can Ortega diced green chilis
    1 small can chopped black olives
    1 (4 oz) jar pimento

    Mix and serve with tortilla chips.



    And another desert. You could make a trifle that is really easy and light. I have also done this one sugar free several times for dinners we have had at our church b/c we have quite a few diabetics...and the sugar free one is really good too.

    Angel food cake, broken into cubes
    Frozen mixed berries
    1 Large box of Vanilla pudding, prepared
    2 (8 oz...or a 16 oz container, divided) containers Cool Whip or make your own Whipped cream

    Prepare pudding as directed on box, then fold in one 8 oz container of cool whip. In a trifle bowl or punch bowl, layer angel food cake, frozen berries, pudding mixture, and cool whip. Repeat layers. Refrigerate until ready to serve. I usually save just a few berries to go on top of the trifle...not a lot just a little spoonful right in the center.
