    Default Meatball recipe....anyone have a good one??

    Does anyone have a good meatball recipe they would like to share? I'm throwing a Spag&Meatball benefit supper for my BIL and need to make 20 lbs. of meatballs. Everytime I make meatballs, they always fall apart...so a recipe that would help with that would be much appreciated!! TIA!!

    you need 1lb ground pork and 1lb ground beef (or you can use ground chicken/beef, ground turkey/beef)
    1 slice bread, some milk
    2 spoons of uncooked rice
    1 onion, finely chopped
    1 egg
    salt and pepper

    Obviously, if you want to do 20# then you'd need to multiply..... I'm thinking 10 times for most ingredients but maybe not 10 eggs...

    Dip slice of bread in milk. Squeeze milk out. Cut the bread very finely.

    Mix meat, sliced bread, rice, chopped onion, egg, and salt and pepper together in a bowl. (I do this by hand.)

    If the mixture feels "too hard", add water. Keep mixing until it is soft but not runny.

    Wet your palms and with a spoon take the meat mixture and roll in your hands to make meat balls of any size you like.

    Drop the meatballs into simmering tomato sauce and cook for 3-45 minutes.

    HTH! It's my Romanian MIL's recipe, and it is good! A little time consuming, though...

    This is how I make my meatballs.They are really good.With or without the pasta.Sometimes we do them w/o the pasta.Serve w/ mash potatoes and green beans.Just like meat loaf balls .

    DO they have to be cooked in the sauce? Or could I bake them? I have a month before the benefit supper and I want to make them ahead and freeze them. I never thought about ground pork...maybe I should scratch the 20 lbs. of burger and go 10 lbs. of each? AAHHH...I've never done a benefit supper before, and I think i'm gonna have a hard time! LOL!

    Double it as needed.

    Meatballs..
    2 lbs ground beef
    2 eggs
    salt & pepper to taste
    1t oregano
    1T parsley
    1/2 t basil
    1 clove crushed garlic
    3T parmesan cheese
    1 cup breadcrumbs

    Mix and form meatballs, you could brown them in the oven on a cookie sheet but I just add to the sauce raw because they cook though fine that way. Simmer in sauce for 4 hours stirring often.

    This is so strange! I just made meatball subs for dinner last night! Apennysaved's recipe is very close to mine. I brown mine in a frying pan then put them in the spaghetti sauce on low for about 1 hour.

    After you find a recipe to your liking, my suggestion is to use a stand mixer with dough hook for mixing all your ingredients together. And ice cream scoop for making uniform size meat balls. I have best success when adding cooked meat balls to sauce during the last half hour before dinner or mine fall apart.

    I just started making home-made meatballs & I've got to admit this is a quick and easy recipe plus it's delicious! I've got to where I watch a lot of cooking shows, and this recipe came from one of them.

    Meatballs
    1/2 pound ground sirloin
    1/2 pound ground veal
    1/2 pound ground pork
    4 slices fresh white bread
    1/2 cup water
    5 plump cloves garlic, chopped
    2 large beaten eggs
    2 tablespoons minced Italian parsley
    1/2 cup finely grated pecorino (parmesan cheese)
    1/2 cup Breadcrumbs (i made my own home-made breadcrumbs, recipe included at the end... Or you can use already made Italian breadcrumbs)
    2 teaspoon salt
    1 teaspoon black pepper

    1. Tear the bread into small pieces. Place in a small bowl, cover with water and allow to soak for 5 minutes

    2. Place the ground meat in a large bowl. Squeeze out and discard the water from the bread. Add all remaining ingredients to the meat, combine well with your hands and form into meatballs approximately 2" in diameter.

    3. Shallow fry the meatballs in a large saute pan until golden brown on all sides 3-4 minutes per side.

    Cooking these for the first time I only used 1 lb ground beef & 1/2 pound of pork. Because the sirloin was $8.00 for a pound and I refused to pay for it. And I recommend if you don't like strong garlic to only use 3 cloves of garlic instead of 5.

    Home-made Breadcrumbs
    1 pound loaf rustic italian bread such as pugliese (i used white bread)
    1 cup finely grated pecorino cheese (parmesan cheese)
    2 garlic cloves put through a garlic press
    2 tablespoons dried Italian herbs
    3 tablespoons dried parsley falkes
    1/2 tablespoon fine sea salt

    Day before you plan to make breadcrumbs. Slice the bread into 1/2 inch slices. Place slices on cake racks to dry overnight

    In batches, crumble or tear bread slices into the bowl of a food processor fitted with the steel blade. Pulse the bread multiple times until the crumbs are about the size of a dime.

    Add the cheese, garlic, herbs and salt and continue to pulse until the breadcrumbs become fine. Store what you are not using in the freezer or in your refrigerator for 3-4 days.
