    Default substituting lemon juice for lime juice? (recipe in post #7)

    I found a recipe for mango salad that sounds yummy! But, it calls for lime juice, which is probably one of 2 or 3 foods in the entire world that my husband doesn't like. Seriously...he's not picky at all. I want to make it, and I thought of using lemon juice instead. I know it would make it more sour, but other than that, do you think it would be ok? If not...any other suggestions?

    I like mango with lemon, so I would think it would be okay. Papaya is also delicious with lemon.

    Thanks! I thought it would be ok...and lemon is so refreshing when it's warm outside. But, I thought I'd ask, just in case someone tried it and found out it was not so good!

    I just have to tell you....I made a Black Bean Mango Pineapple salad, and it was WONDERFUL!!!! Thanks for your help!!

    OK...here it is:

    Mango Pineapple Black Bean Salad

    1 can black beans (rinsed and drained)
    2 med size magoes, peeled and diced
    1/2 to 1 cup pineapple tidbids (I used canned)
    1/2 cup diced red onion
    1/2 cup diced red bell pepper
    6-8 slices jalapeno pepper, chopped (I used the ones in a jar)
    1 tablespoon dried cilantro (you could use fresh if you have it)
    1/4 cup lemon juice
    1 tablespoon olive oil
    1 tsp cumin
    1/4 to 1/2 tsp cayenne pepper
    1 tablespoon honey
    salt to taste (I didn't use any)

    Combine all ingredients in a bowl. Toss well. Refrigerate for at least an hour before serving.

    **I typed it exactly the way I made it. The original recipe called for lime juice, but I subbed lemon.
