    HELP LOW Carb Recipes

    I know it sounds hard for some to stick to a low carb diet.. but I know it can be done. I dont eat alot of breads/Carbs if any at all. Looking for some help with Low carb recipes to stay on track. any and all help is appreciated. Im getting bored with the same foods every day. I do eat cereal in the morning but that is always eaither wheat puffs, special K, or cherrios.

    afternoon meals sometimes are a veg, fruit, some type of lean meat. ( I dont eat red meat)

    I use splenda, whole wheat flour, egg beaters applesauce (no sugar added)

    have done alot of foods different for the kids that they dont really recognize the difference much except for the sweetness is different.

    I am on a low carb diet, I perfer it that way as My family has a history of diabetes.

    I attempt Low Carb as well. Most Recipes I have found are too heavily meat-based.
    Here is a typical day's sample of what I do if you wanted ideas:
    I don't cook often.

    1.) I love my homemade Low Carb McMuffins for Breakfast/Lunch that I make & freeze ahead with Turkey Sausage, Egg White, Fat Free Kraft Cheese Singles & Orowheat's Double Fiber English Muffins from the day old Bakery. Total=$.68-$.89 each.

    2.) Veggies/Fruits--Low Carb Grocery List:
    I made categories of low cost, low pesticide, deeply colored veggies for Health
    & Cancer Prevention.
    Sadly, every adult/child each has to fight against Cancer daily in this toxic world.

    The enzymes/phytonutrients found in brightly colored veggies/fruits
    just can't be put in to vitamins/supplements yet.
    We need to eat each bright color every day from all 6 Categories for our best bet against Cancer/Disease.
    One Serving= 1 Cup Raw or 1/2 Cup Cooked=6 servings/day minimum.

    I dip raw veggies in Sabra Garlic Hummus or Athenos Red Pepper Hummus.
    Or, I make a Cottage Cheese Dip in the blender with Hidden Valley Ranch Packets, for a high protein, low fat/low carb dip.

    Veggie/Fruit Categories: I eat ALL every day.
    Green leafy, Cruciferous, Blue/Purple, Red, Citrus, Orange/Yellow.
    In order, that would typically be:
    Spinach-Organic Earthbound Farms-Costco
    Purple Cabbage-Conventional; A Superfood, cheaper than Fresh Organic Blueberries everyday.
    This meets BOTH the CRUCIFEROUS AND BLUE/PURPLE categories.
    Since Blue/Purple are the highest cancer fighters: I eat 1-2 Cups raw Purple Cabbage every single day, as a preventative medicine conscious choice, not because I like it. Raw or Cole Slaw.
    Red-Organic Red Delicious or Fuji Apple Peelings Only.
    V8 Extra Fiber Tomato Juice or Campbells Organic Tomato Juice Winco or Big Lots.
    Citrus-Lemon Juice for Water; or 1/2 Orange.
    Carrots-Organic Earthbound Farms, Grocery Outlet. Carrot/Raisin Salad.

    3.) Darigold FF Cottage Cheese is the best flavored + NO MSG.
    I dip Organic Fuji Apple Peelings in the CC 3x/week for Breakfast= most nutrition, least sugar & save the rest of the apple for DH.

    4.) Homemade Harvest Soup(from scratch in 20 min)
    I made up this Recipe when I wanted to use leftover Spaghetti Sauce
    for the 3rd day in a row.

    RECIPE: Chicken & Beef Broth, I Jar any Spaghetti Sauce, Hamburger, Cabbage, Celery, Carrots, Onions, Parsnips, Spinach, Italian Spices & Quinoa or Uncle Ben's Rice.
    Serve with Sour Cream and Grated Parmesian on top.

    5.) Dreamfield's Pasta Salad with Chicken/Tuna, Olives, Tomatoes, Cauliflower & Kraft Roasted Red Pepper Italian Salad Dressing.

    5B.) Asian "Shirataki Noodles" found online & in Asian Markets.
    Are Carb Free AND Calorie Free, also called "Konnyaku Noodles".

    6.) HCW's KristinC's AWESOME Tabbouleh Recipe, but substitute Quinoa.

    7.) Cold Potato Salad Only, as this contains "Resistant Starch" & lower Carbs that any hot potato or hot potato salad doesn't.

    8.) Fast Go-To meals:
    Cottage Cheese/Canned Mandarins/Tomato Juice,
    Cold Broccoli/Raisin/Sunflower Seed Salad with Sugar Free Honey Mustard,
    Chilled Blanched Cauliflower with Kraft Roasted Red Pepper Italian.

    9.) Whey Protein Powder Drink: I like "BioPlex Nutrition WPI", Vanilla Creme Flavor made in Blaine, Washington, just google.
    ICED LATTE-Mix Coffee & Protein Powder or make a Fruit Smoothie.

    10.) Pizza made with Whole Wheat "Boboli".
    I buy at an Orowheat day old Bakery for less than using coupons.

    I hate when things get boring because ya eat the same stuff everyday. I used to eat for a week straight.:

    egg whites with chopped/diced green peppers and onions with fat free shred cheese
    2 slices turkey bacon or Canadian bacon

    2 X ea day chicken breast baked with lemon pepper
    1 c salad greens spinache and romaine
    1 & 1/2 c chopped vegs. cucumbers/peppers

    1 carb smart yogurt
    carb clever canned fruit 1 daily
    2 jello cups (sugar free)
    1 sugar free ice pop
    10 grape tomatos


    1000-1200 cal per day total carb ct 15-20

    it was so boring my DH wanted to order out all week ROFL

    I also follow a low carb diet and eat only chicken, turkey and fish.

    Here are a couple of my staples:

    Celery with Lowfat peanut butter

    Homemade soup

    Enchilada Soup: chicken, broth, veggies, can or package of enchilada sauce, chunk of velveeta to taste.

    Cottage cheese


    Here's my routine that makes it finally work for us:

    I try to cook 15+ meals at a time and freeze them. In the beginning, I made these elaborate recipes and we didn't care for most of them. Now I wait for chicken breasts to go on sale and buy a ton. I clean them up and make packages with 3-4 breasts per bag. My main addition is usually Grill Mates. We LOVE them. I also like some of the marinades at Fresh and Easy. I'm always on the look out for anything I can throw in the bag.

    I do the same with fish and turkey, but way more with chicken. For dinner, I cook the breasts and a vegetable. We usually have one or two peices left and that go into a salad, wrap, soup, etc. for lunch the next day.

    Each night as I prepare dinner, I take another bag out of the freezer for the next night. About once a week, I'll take all three pieces of chicken and make a huge pot of soup and/or a baggie of cut up pieces for salad.

    PP mentioned Dreamfields. Love them! I probably have 60 boxes in my pantry. There is a $1/1 coupon out there right now and my Kroger has them on sale for $1.69. .69 for a box is a screaming deal. The regular price is $3.

    Once or twice a week, I'll add pasta to the mix. Stretch the marinade with something, add a couple veggies and put it with the pasta. I'll also make a pasta salad with left over chicken. Chicken, dreamfields, sunflower seeds, mozz cheese and what ever dressing I can come up with to compliment the flavor of the chicken.

    I cook the chicken the same way almost all of the time - sear it in a large skillet and finish it in the oven.

    I almost always have 2 or three things in the fridge that are ready to roll for lunch - usually soup and chopped up left over chicken.

    I've always really struggled with low carb, because I am so picky about meat. Once I figured out my "chicken bags" it's been a piece of cake. The key for me is to keep it simple: make a bunch of chicken bags, take one out everyday, put something simple with it.
