Default Some easy kid-friendly recipes needed

My girls and I are stationary for a month in Iowa without Dh and I just haven't been able to make myself cook since Friday when Dh left. So we've eaten out WAY too much.

I need some very simple, kid-friendly food ideas to get me going again. The kids don't like casserole/salad things where lots of foods are mixed together, so the more simple the better.

What about quesadillas? Those are pretty easy to make on the stove-top and you can put a variety of things in them according to the kids tastes. You could do anything from the traditional cheese/chicken to something like cream cheese with raspberry jam or peanut butter and banana slices.

I'll post again if I think of anything else. Hopefully the time without your DH will fly by. I bet you're at least glad to be in one place for a little while after all of your traveling.

Quesadillas is a good idea. I used to make them all the time for the kids, but I kind of forgot about them with the traveling. I actually have all the ingredients I need...lol! Cheese & Tortillas

For lunch I made turkey & cheese wrapped in Pillsbury crescent rolls. It's pretty yummy, but the kids only ate a few bites. We're also in the middle of baking a big batch of banana bread/muffins since we had a bunch of bananas get too ripe.

I need to make some green beans tonight because someone gave me a bunch from their garden & I don't want them to go bad. That usually calls for a meat based meal, so I 'm not sure what I'll make. Maybe a roast since that's easy.

The break from traveling is nice. I've been able to spend some time with my family who lives here which is good since I usually only see them once a year. But it is taking a bit to get used to being stationary since we've been on the go so much. And of course I do miss Dh. The longest we've ever been apart is 1 week, so this is a bit of a challenge.

My entire family likes the salisbury steaks I make. My kids love them, and so do my grandkids...and my husband craves them!

I just mix 2 lbs of ground beef with 1/2 cup water and 1 package of onion soup mix. Make it into patties, and brown them well on both sides. Take them out of the pan and pour the grease out. Then, put them back in the pan and cover them with about 3 cups of gravy. Let them cook over medium heat for about 45 minutes. Serve with mashed potatoes or noodles.

For the gravy, I just make up some beef bouillon and add flour until it's thick. Then I add a little bit of garlic powder, black pepper and thyme.

This would go great with the green beans!

You could take the Pillsbury Bisquits and sort of flatten them out and put taco meat and cheese or like sloppy joe meat in the middle and fold them over and bake for little pocket sandwiches. You could also make breakfast for dinner, make little silver dollar pancakes, or wrap sausage links in the pancakes for pigs in a blanket. The girls could help out with both meals too and that might be fun for them.

I can understand the being apart from your DH being difficult. My DS and I spent 5 weeks visiting my parents and my DH couldnt go for work reason. It was the longest we had ever been apart, but we just took it one day at a time and talked to each other everyday.

If I think of any other recipe ideas I'll post them for you.

Those sound like some good ideas. I do struggle with meat meals when Dh isn't around because I'm not a big meat fan (I eat it, but in very small portions). So those sound like some easy meals to do.

Pizza wraps:

Tomato or marinara sauce
Cheese
Flour tortillas
Whatever meats and toppings you have/desire.

Fill your tortilla, wrap, and microwave for 30-45 seconds. Serve with fruit, salad, or any other vegetable.

You can substitute pizza fillings with chicken, beef, etc and use barbeque sauce instead of marinara.
