CHEF ISO help finding a dinner recipe to make to bring to a neighbor tonight... specifics inside.

Hi all

A neighbor's son did a number on himself snowboarding over the weekend. He ended up in ICU due to injuries and is now slowly recovering in a regular room. I offered to bring dinner. She accepted for tonight and told me they have no food allergies, only no nuts (1 son doesn't like). I will deliver dinner tonight to their 16yo ds and 8yo dd. The 19yo dd and mom and dad will eat later when they get back from the hospital. But, I want to go to a spin class at the gym for 4:15 and won't be back til just after 5:30. Is there a simple but delicious recipe for the crockpot that I can double (for my family too) or a casserole I can leave in the oven while I'm gone (about 90 minutes -- eesh!). I would appreciate any ideas.... I can go to the store now and get needed ingredients or I have chicken breast tenderloins boneless skinless in the freezer.

Here is a very simple hotdish and takes very little time. Make it on the stovetop. I don't measure its all on how you like it, but heres approx.

Approx. 1 1/2 browned ground beef
1 can cr of mushroom soup
Approx. 1 -16 oz bag frozen corn - little less
Medium egg noodles however many you llike
Add milk to a constitency(MS) you like approx 1 cup
Salt & pepper to taste

Brown beef and add the rest of the ingred. cook on stovetop for approx. 10-15 just until the corn is done. We love ours with toasted PB sandwiches.

I have a yummy recipe my family loves that might work for you:

Chicken Creole

1 family pack chicken thighs, whole chicken, or boneless skinless chicken breasts
1 can stewed tomatoes
1-2 celery stalks
1 cup diced onion
1/2 - 1 cup diced bell pepper
3 cloves minced garlic
2 jalapeno peppers, seeded and chopped (or use diced pickled jalapenos)
Creole seasoning blend to taste
1/2 cup dry white wine (or cooking wine)

Place all ingredients in crock pot and cook on low 8-10 hrs. Debone chicken (if using whole chicken). Serve over rice.

This is great with french bread and a salad!

This is my favorite CP meal! I don't use a lot of measurements, but you really can't mess it up.

Chicken breasts (frozen or fresh)
Salsa
Taco seasoning
Water

Place chicken in CP.
In a mixing bowl, combine salsa, a packet of taco seasoning, and a little water. Stir together and pour over chicken.
Cook on Low if you have all day; I've cooked it on High in just a few hours.

When chicken is cooked through, shred with a fork and spoon onto tortillas, crunchy taco shells, etc. Top with cheese, sour cream, etc.

DELISH!

I've got one more. I've only made this once, but it was so easy and everyone liked it. I found it on AllRecipes:

Chicken Tortilla Soup

1 lb shredded cooked chicken
1 15 oz can tomatoes
1 10 oz can enchilada sauce
1 med. onion chopped
1 4oz can green chiles
2 cloves garlic, minced
2 cups water
1 15 oz can chicken broth
1 tsp cumin
1 tsp chili powder
1 tsp salt
1/2 tsp pepper
1 bay leaf
1 10 oz pkg frozen corn (I used canned and added it at the end)
1 T chopped cilantro, if desired
7 corn tortillas, or use tortilla chips

Stir all ingredients except tortillas into crockpot. Cook on LOW 6-8 hours, or on HIGH 3-4 hours. Serve with crushed tortilla chips on top.
