    my kids love eat and help make bacon and cheese wrapped tator tots. Something they can do to make your life easy.

    All you need is bacon cut in half strips, cheese (we use slice cheese) in 3 pieces and frozen tator tots. lay bacon strip out, then cheese, roll tator tot, place in pan and then bake as directed for tator tots. These are great for appitizers, or just because.
    Put the kids to work and moms sit and relax. enjoy

    :) Umm... I don't have any kids, but I guess my friends and I are still kids. xD

    Moo's Faux Fried Chicken

    You'll need:
    -- skinless chicken breast/thighs
    -- milk
    -- 1 egg
    -- potato chips of your choice (Pringles and Lays work best IMO because of their "crushability)
    -- butter (to grease the cookie sheet if needed)
    -- salt, pepper, garlic powder (optional for seasoning)

    Preheat the oven to 350F. Get your skinless chicken thighs/breast and cut it into finger food sized pieces. (You night want to use the mallet and make some pieces thinner to enable even cooking before moving on.) I throw some garlic powder in there, but that's optional, a pinch of salt and/or pepper can suffice.

    With one hand, dip the chicken into a mixture of egg and milk. With the other, coat the chicken in finely crushed potato chips (I've used various flavored Pringles). Lay that out on a greased (I just use parchment paper instead) cookie sheet and bake for 10 minutes on each side.

    Serve with your favorite dipping sauces (ranch, bbq, HONEY MUSTARD!, ketchup, hotsauce...).

    hopeky94, we have this crockpot chicken all the time! It's good stuff! We kick it up a bit with some cayenne pepper!

    I just save that kind of stuff for lunches or for nights when I don't cook and we don't have leftovers. It is still such an easy meal. You may be surprised what your kids like if you try different stuff. My kids love stir fry, grilled pork, homemade pizza, quesadillas (there is a great recipe on all recipes.com), goulash. I make a lot of different dinners, and they will eat most of them. (Sometimes if I make something I think they might not like or be able to eat, like fajitas, I put the fajita filling and cheese in a tortilla and make them quesadillas.)

    One of my kid's favorite food for summertime is chicken wraps. I take boneless chicken breast, saute it in olive oil, a pinch of seasoned salt, and basil. Then I cut it into bite sized chunks.

    We take soft tortillas (slightly warmed), and add shredded cheese, chicken, tomato, lettuce, and the dressing of their choice (usually it's ranch). Then wrap them. YUM!

    If we don't have the ingredients for the chicken wraps, I make homemade fettucini alfredo to go with the chicken.

    They also like homemade sloppy joe. It's pretty much hamburger, bbq sauce, onions, chili powder, a pinch of garlic powder, and sauce. I don't like the taste of Manwich, so I make my own.

    Homemade chicken pot pie is one of their all time favorites. My husband likes it, and he is not a big fan of chicken. I usually use leftover roasted chicken cut into cubes, and the broth. If you don't have broth, you can use chicken boullion.

    1 cup diced carrots
    2 or 3 peeled/diced potatoes
    1/2 c. peas
    1/2 c. heavy cream

    You will need a fairly large pot. Cook the carrots and potatoes (in just enough water to cover them) in a until they are just soft. Add peas, chicken broth, and chicken. Add water until you have about 4 cups. Cook until your chicken broth is dissolved. Add heavy cream, and heat until bubbly. Thicken with cornstarch and water. To do this, you take about 2 Tablespoons of cornstarch and add a just a little COLD water and stir until it dissolves. Then add it to your pot. Stir until thickened. After it is thickened, pour it into a 13 x 9 baking dish. Preheat oven to 350.

    For the top, I use the biscuit recipe.

    3 C. flour
    1 Tablespoon baking powder
    3 teaspoons sugar
    1/2 teaspoon cream of tartar
    1/4 teaspoon salt

    Mix dry ingredients well. Add 1/2 cup shortening, margerine, or butter. I use slightly softened butter. Cut in using a fork or pastry cutter until mixture resembles coarse crumbs. Make a well in the center, and add 2/3 cup of milk. I use heavy cream. It tastes so much better! Stir until dough clings together. Roll out on a lightly floured surface. If it seems really sticky, knead it in a little flour first.

    After it is rolled out to 13 x 9 size, fold it in half (so it's easy to handle) and place it on your pan. Unfold, then seal any edges. Poke a few holes in the top. Then bake for about 20 to 25 minutes on 350, until top is golden, and cooked through. I usually put foil or something under the pan because it likes to bubble over.

    This is so thick and creamy, but it is not figure friendly.
