If the rebate says something like "circle purchase prices," which is what the Coors rebates usually say, then the coupons are irrelevant. On several of the Coors rebates, I've sent in receipts for soda (Coke) that I've purchased at CVS and only paid pennies OOP.
As for buying "$100 of groceries" again, it depends. If it says "circle purchase prices" it shouldn't matter. However, what I'm inclined to do on something like that is, buy a gift card for the amount of my coupons, to offset the coupons so to speak, so my total receipt is still over $100. For example, I purchase $100 in groceries, I have $45 in coupons, I'll buy a $45 gift card, so my receipt is $100 and I can circle $100 in food prices. It may be overkill, but on a rebate that large, I'd rather be safe than sorry. I know on several Miller rebates, they amount of groceries has to be the total of the rebate receipt, but then again, there's don't usually say circle purchase prices.
