Would cream cheese count for this one under either a condiment or a dip? And does anyone know if a coupon that shows up on the receipt tagged for that item counts against it? Does sales tax count?

I've got a receipt that is just under the $10 if none of the above situations work, so I'm wondering if I need to run out and stock up on pretzels

It's my experience that these rebates are pretty liberal. I think cream cheese would be a stretch, but you could make the arguement. I don't think the coupon matters. The only thing I'm never sure on is if the receipt shows a regular price of $20, but is on sale at $5 off and has the -$5 under the $20. In that case I just assume $15. But if you bought a $2 item and had a $1 coupon, I would count it as $2. And sales tax does not count.

You can use multiple receipts so you could just go buy one more item if you aren't quite at $10.
