    It's time for some fun. With Memorial Day fast approaching I thought it would be a great theme for a contest. So let's have a Memorial Day Virtual Potluck. Let's dig into our recipe boxes or get creative.

    So here's how the contest will work.

    Think of a dish you might bring to a potluck or picnic. It could be an entree, side dish, salad, appetizer or even a dessert.

    You post that recipe as your entry (your virtual dish) to the contest (potluck) !


    So get creative but if you want to bring plates or napkins, that's fine too! But once an item has been listed you can not list it again as the item that you are bringing!!! After all, we don't want just potato chips and napkins at this potluck.

    Exception: If there's an entry is a recipe and a your recipe is somewhat different, that will be allowed

    The winner will be picked by a random number generator on Tuesday, May 31,2011. Entries close a 11:59 P.M. on Memorial Day - Eastern Time.

    Reminder -

    1) No two people bringing the same item to the party ! Only the first listing of the item count. Any recipes counts as a different item.
    2) Only one entry per person
    3) Winner gets a $20 Publix gift card.
    4) So get creative and enter that recipe that you're known for! Impress us all.

    Publix is an awesome store and the $20 gift card would be wonderful! :)


    I will bring broccoli slaw!
    The broccoli slaw salad is with broccoli slaw, red grapes, sunflower seeds and poppy seed dressing. Halve the grapes and toss all the ingredients to combine. It is the most delicious salad and you do not even realize that you are eating broccoli!

    Jalapeno popper burgers (makes 4 servings)

    1 1/2 lbs ground beef
    2 jalapeno peppers (you can add more if you like things extra spicy- remove the membranes and seeds if you don't)
    8 oz cream cheese, softened
    2 cups shredded cheddar cheese
    8 slices of bacon
    2 tbs ranch dressing seasoning
    4 hamburger buns
    lettuce and tomato, to garnish
    salt & pepper, to taste
    ranch dressing, if desired

    Finely dice the jalapenos (wear gloves!)

    In a mixing bowl, combine the jalapenos,cream cheese, cheddar cheese, and ranch dressing mix (this step can be completed ahead of time- the longer the flavors blend the better); refrigerate for up to 24 hours.

    Divide the ground beef into 8 equal portions. Roll each portion into a ball and flatten with your hand to make 8 patties. Divide the cream cheese / jalapeno mixture into 4 equal portions - place a portion into the center of 4 patties. Take another patty and place on top of the mixture, sealing both patties. Complete with remaining patties / cream cheese mixture.

    Wrap each patty with 2 slices of bacon. Grill over medium-high heat until burgers are cooked to your preference. Serve on a bun with lettuce and tomato and ranch dressing, if desired.

    CHEF Cold Pasta Salad - Publix - Virtual Potluck Contest!!!

    Delicious Pasta Salad - Served Cold

    1 lb. Penne Pasta (prepared according to instructions on product). Then shock it by draining off the hot water that it was cooked in and placing the pasta into a bowl of ice water for 1 - 2 minutes. Drain again thoroughly and drizzle with extra light tasting olive oil so that the pasta has a slight coating.

    3 tomatoes cut into 8 wedges each

    1 lb. raw broccoli florets (trimmed from the stems and cut into bite sized pieces).

    1/2 lb. shredded carrots

    2 medium red onions julienned

    2 large cucumbers cut in 1/2 length wise and then sliced

    3 cups balsalmic vinagrette salad dressing (also works well with italian dressing).

    Salt and pepper to taste. Do Not Skip this step. It adds such a delicious dimension to the salad.

    Place all ingredients into LARGE bowl and toss well. Any ingredients can be adjusted, added, or deleted altogether to suit one's personal tastes.

    Serve Chilled. So Good on a hot summer day!!

    Coconut Pecan Cake

    1 box yellow cake mix
    3/4 c veg oil
    4 eggs
    1 c water
    1 can coconut pecan frosting
    3/4 c chpopped pecans

    Combine all and beat at medium speed for 2 minutes. Pour into a greased and floured bundt pan. Bake at 325 degrees for 50-60 minutes. Cool completely and dust with powdered sugar. 12-16 servings.

    Easy to transport to a potluck because it has no sticky frosting. I took one of these to a picnic today. Yummy.

    I'll bring cotton candy flavored ice cream for milkshakes. The easy way to make them is to use Target's cotton candy ice cream and a bit of Blue Bell vanilla (that's what I do, obviously you can use no vanilla or another brand). The difficult way is to find cotton candy flavoring and make your own homemade ice cream. I use 3/4 cotton candy flavoring and 1/4 vanilla extract. I put in food coloring and sprinkles and my kids, nieces and nephews love it!

    I will bring my scrumptious slow cooked baby back ribs. Atleast me and my family think they are scrumptious...lol.

    Recipe:
    Wash ribs and rub down with your rub of choice. I normally go pretty simple by using 1 or 2 teaspoon of garlic, a pinch of rosemary, 2 or 3 tablespoons brown sugar, salt and pepper to taste, and a teaspoon of Butt Rub(this is the actual name of the spice). Then I coat with bbq sauce, wrap in aluminum foil, and set in the fridge for an hour or so or overnight if i have time, so the flavor sets in. Remove from the fridge about a 1/2 hour before they hit the oven. Preheat the oven to 225. Add 1/4 cup of cooking wine to the ribs and cook for 3 to 4 hours. Every 45min to an hour open the ribs up and baste with juices/sauce in the pan already. After 3-4 hours I bump the oven up to 325 and cook them for an hour uncovered, basting along the way. Finally about 30 minutes before dinner I bump the oven up to 375 or 400 and rub on some more brown sugar (with a spoon, not hands). Alternatively you could grill them for 15 minutes at the end to get the sweet caramelized outside.
    Anyway, this is my favorite way to cook ribs. They just fall off the bone when they are done. Goes great with homemade mac n cheese :)
