    2. Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. Mix in the tomatoes, and cook 5 minutes. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5 minutes, until thickened. Transfer to the prepared baking dish, and top evenly with corn.
    3. Prepare the corn muffin mix according to package directions. Spread evenly over the corn layer in the baking dish.
    4. Bake 20 minutes in the preheated oven, or until puffed and golden. Garnish with olives and cheese.
    I made this tonight. Very good!!

    if you bought white beans from the progresso sale - this is *excellent* & cheap & simple & filling....

    everyone in my family is a light eater - this does not make a lot - so you may want to double it

    1/2 onion diced
    1 clove of garlic diced (or more... we love garlic here)
    chopped celery (I keep this chopped in the freezer so I am not sure how much? 1 rib?
    1 can of cannellini beans drained & rinsed
    1 can of stock (I make my own and freeze it in jars)

    sautee onions in olive oil. when translucent add all other ingredients and let simmer for about 20 minutes. season with salt & pepper (and I add sazon completa). puree and serve with crusty bread to dunk.

    Here's a recipe to use up some of the pasta, tomatoes, pasta sauce, and beans that we've been buying. I made this soup tonight for dinner, served it with a 1.29 french bread loaf on sale right now and every member of my family went on and on about how wonderful it was. It's a very filling soup and makes a ton. I may have spent all of 6 dollars including the bread and this makes a good 9-10 servings.

    Thanks for the wonderful recipes, everyone! I will definitely be trying the Pasta Fagioli recipe, I picked up some cannellini beans specifically for Italian recipes :)

    Here's to resurrecting the recipe thread!
    I just tried a recipe with an ingredient list straight from our weekly matchups! It's pretty yummy. I sauteed some onions in butter blend first and subbed all milk for water. Just make sure it doesn't boil or it will curdle. It's actually very creamy and rich without the cheese when you use the Betty crocker three cheese potatoes.

    Nacho potato soup

    INGREDIENTS

    • 1 (5.5 ounce) package au gratin instant potato mix
    • 1 (11 ounce) can whole kernel corn, drained or GG frozen or fresh $.25 ear
    • 1 (10 ounce) can diced tomatoes and green chilies, undrained or Pace
    • 2 cups water
    • 2 cups milk
    • 2 cups cubed process American cheese or Kraft shreds
    • 1 dash hot pepper sauce
    • Minced fresh parsley

    DIRECTIONS

    1. In a 3-qt. saucepan, combine contents of potato package, corn, tomatoes and water; mix well. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender. Add milk, cheese and hot pepper sauce if desired; cook and stir until the cheese is melted. Garnish with parsley if desired.

    Copying and Pasting the ideas I posted for boxed RICE MIXES on one of the weekly threads .... hope no one minds the repeat but thought these might be useful here ...

    Remember you can always leave out the seasoning packet or use only part of it if you don't care for a flavor you've stocked up on. Some are just too strongly flavored or too salty tasting to me ... so I leave out some of the seasoning. If it's a mix that has the seasoning right in with the rice, not in a separate packet, you can put it in a wire mesh strainer and shake off a lot of the seasoning. I usually do this with Mahatma rice mixes that I've gotten free. Then you can use the rice pretty much just as you'd use plain rice.

    You can make super easy CHICKEN & RICE just by mixing the RaR kit (per directions on box) in a cassole dish ... add boneless skinless chicken breasts. Cover and bake till the chicken is done. You can top with cheese if you like ... add frozen broccoli or veggies to the dish as it bakes ... and use chicken broth or cream of chicken soup for your liquid if you want even more chicken flavor.

    Cowboy Chicken & rice = RaR topped with chicken breasts ... topped with a mix of 1 jar salsa + 2 tbsp (more or less to taste) brown sugar + 1 tbsp. spicy brown mustard. Cover and bake till the chicken is almost done. Remove lid, continue to bake till chicken is done and sauce thickens slightly.

    Taco Rice = prepared RaR mixed with left-over (or freshly prepared) taco meat & black beans &/or drained canned corn. (Personally I don't care for the corn, but it is a great way to really STRETCH this if preparing it for a crowd ... i.e. youth group night.) Serve over a green salad, or with chips for dipping, or as a burrito/taco filling with salsa, sour cream etc.

    A super easy, quick, cheap from stockpile .... Broccoli & Cheese Casserole = one microwaved box of RaR mixed with a bag or 2 boxes of frozen broccoli in cheese sauce (microwaved) ... mix together ... top with shredded cheese or Ritz crumbs and put under the broiler just till topping is like you want it.

    This week (5/7 ad) the Perdue Short Cuts Chicken Breast 2 for $6.00 and Hidden Valley Ranch Dressing BOGO $3.19 (less coupons) would work great in Buffalo Chicken Dip ... just chop up the chicken a bit. Combine with FREE Franks Hot sauce that we all have stockpiled, cheap cheese from some other sale ... and serve with cheaply stockpiled Ritz Crackers. Or make an entree buy using the dip as a filling for crescent roll calzones.


    Buffalo Chicken Dip
    2 cups cooked chicken, diced or chopped
    --- or one large can/pouch of chicken
    4-8 oz. Franks Hot Sauce
    12-18 oz. cream cheese, softened
    1/2 cup blue cheese or ranch salad dressing
    2 cups shredded Cheddar cheese, divided

    Preheat Oven: 350°
    In a large bowl combine: chicken, hot sauce, cream cheese, dressing and ½ of the shredded cheese. (Adjust the amounts of hot sauce and/or cream cheese to make the dip mild, medium or hot per your own taste.)
    Pour mixture into a greased baking dish and sprinkle with remaining cheddar cheese. Bake at 350º F for 25 to 30 minutes. Serve with celery sticks, tortilla chips, baked pita or bagel chips and/or crackers

    Make the Gorton’s Shrimp Temptations go further by serving a prepared package over stockpiled pasta (angel hair works great for this) and a package of steamed broccoli or oriental mix veggies. Toss to combine.

    Hellmann’s Mayo works GREAT in Angel Bisuits - http://www.gagirl.com/recipes/lowfatangelbiscuits.html ... and if you use self rising flour you can leave out the salt and baking powder making this a super QUICK & EASY 3 ingredient recipe.

    Great idea! I combined your idea and the shrimp pasta recipe on the cover of eatbetteramerica booklet. It costs a bit more with addition of tomatoes, spinach and wine, but it was healthy and a super yummy meal for Saturday night!

    If you were like me and able to get a lot of the Starkist Seasations a couple of weeks ago - here's what I've been doing with them. Not much of a recipe more of a idea om how to use - other than straight out of the package on a plate -

    1) Cook, let cool a little and break up and throw on top of a salad - I used the Thai and the Orange/Ginger flavor for this

    2) Now I also combined the Mediteranean Seasations with a package of the El Paso Soft Taco Dinner for some easy fish tacos. ( I didn't use the El Paso seasoning in this)
