    Yes. Your post was from July and it's now November and I STILL have some of those. I'd forgotten all about them until a few days ago when I ran across them in my pantry.


    e-mealz is also a good site for menu planing around Publix sale weeks. It is a paid service, but it's super cheap. There are some good meals from them, but they seem rather potato heavy and we don't like to eat that way very often.

    I have all the ingredients for Spinach Cheese Bake thanks to recent Publix and Food Lion sales ... so I think i'll make it as a 'surprise' side dish to take to my mom's house for Thanksgiving.



    Spinach Cheese Bake
    Oven: 350° 25 minutes

    1 pkg. (8.5 oz) corn muffin mix
    2 eggs, beaten
    1 carton (8 oz) sour cream
    1 can (10.5 oz) French onion soup, undiluted
    1 pkg. (10 oz) frozen chopped spinach, thawed and drained
    1 stick margarine, melted
    1 cup Cheddar cheese, shredded

    Combine first 6 ingredients; stir until blended.
    Spoon mixture into a greased 9"x 13"x 2" baking dish. Bake at 350 degrees for 25 minutes;
    top with cheese and bake an additional 5 minutes.

    Oven-Baked Coconut Shrimp (Low Fat)
    (this recipe was found at Food.com)

    Ingredients:


    Directions:

    Prep Time: 20 mins
    Total Time: 40 mins


    1. Set oven to 375 degrees F.
    2. Rinse the shrimp under cold water and pat dry with paper towels.
    3. In a shallow dish combine the cornstarch with salt and red pepper; stir to combine.
    4. Place the egg whites in a medium bowl; beat using an electric mixer on high speed until frothy (about 2 minutes).
    5. Place the coconut in a shallow dish.
    6. Working one shrimp at a time dredge the shrimp firstly in the cornstarch mixture, then dip in egg whites and then in shredded coconut.
    7. Place the shrimp on a foil-lined baking sheet that has been generously coated with cooking spray.
    8. Repeat with remaining shrimp (cornstarch, then egg white and then in coconut).
    9. Lightly spray the shrimp with cooking spray.
    10. Bake for about 20 minutes or until the shrimp are done, turn the shrimp after 10 minutes of cooking making that 10 minutes per side.

    Mini Lasagnas - Recipe idea for BOGO sale items
    Courtesy of Rachael Ray this week - Note I changed some items to go along with the BOGO sale this week.

    BOGO:
    Rosetto Ravioli, Stuffed Shells or Tortellini, 10 to 25 oz bag, save up to 4.19
    Ragu Pasta Sauce, 16 to 24 oz jar, save up to 2.19
    Sargento Shredded Cheese, 5 to 8 oz pkg, save up to 3.99

    Also add:
    1/2 cup grated Parmigiano Reggiano cheese
    1 bunch basil leaves (about 24 leaves), divided

    Preparation

    Preheat oven temperature to 375°F.

    Bring a large pot of water to a boil. Salt it and cook the ravioli according to the package directions and drain.

    Build mini lasagnas in the cups of a muffin tin: layer a tablespoon of sauce, a ravioli, a tablespoon of sauce, a sprinkle of mozzarella, a sprinkle of Parmigiano Reggiano cheese and 1 basil leaf and repeat once. Reserve the remaining basil leaves.

    Bake in the oven until the cheese is melted, about 10-15 minutes. Thinly slice the remaining basil for garnish.
