Martha White Yellow Corn Jalapeno muffins w/maple butter

This is a recipe I came up with to simulate some muffins my DH described having in a small Mom & Pop breakfast shop in New Hampshire. Now, I know many of you have some boxes of Martha White corn bread muffin mixes laying around from the recent Advantage Buy flyer coupon.

It's easy. Use two boxes of Martha White yellow corn muffin mix, which will yield about 10 - 12 muffins give or take. Dice up one jalapeno pepper finely, and add in with the mix. I like to fill the tins 3/4 as opposed to 2/3 for higher muffins, Bake as usual.

Take 1/2 stick real butter or Smart Balance 50/50, and soften slightly. Mix in a couple of tablespoons of authentic Maple syrup. Whip until fluffy,

Slice the tops off the muffins after they are cooled so that the muffin are halved. Melt some butter in a skillet and put the muffin face dwon in the pan to grill in the butter until slightly browned. Take muffins out of the skillet, and put maple butter on lower half, place the top back on. Put a little more maple butter over the top of the muffin and serve. Viola, very easy and the jalepeno and maple buttter make for a great combination. Enjoy.

Sounds GREAT! I love jalapenos too! :)

FYI- you can also turn the other muffins into pancakes by adding 3/4 cup of milk and 2 eggs instead of what the package calls for. I made DH blueberry pancakes yesterday with it! :)

CHEF Yummy cornbread casserole using MW cornbread and other freebies from Target



I don't know about you, but we have tons of Martha White cornbread boxes now. (I did donate 20 to the Salvation Army.)

Anyhoo, I made a tasty dish this morning, and thought I'd share my recipe variation with you all. I found a slightly different version in my 11-9 RP. Of course you can always switch up an ingredient or 2. (You could always omit the broccoli and use chopped tomatoes or onions or forget the veggies all together!)

Heat oven to 375 (spray your dish with non-stick spray)
1 box Martha White cornbread mix (the free ones were 7.5 oz but you can always just use the 6 oz bags too)
4 eggs (unless you want it more eggy--add more)
1/3 cup milk (I added a little bit more) (oops I earlier typed water by mistake duuuuhhhhh!)
cooked and chopped broccoli from the free Target deal
chopped Archer Farms ham from the free Target deal (1 pack)
1/4 stick of butter (optional and you can use more here too)
1 cup of grated cheese (I used mild cheddar)
a few shakes of hotsauce for taste
a couple dashes of nutmeg
3 packs of sweetner (I used just like sugar or you can use your free splenda)

Stir, bake for approx 30-35 minutes (edges will get brown and crunchy.)

Serve, and enjoy!

(Note, this pic was after we dug in, and I also used this container to stir the ingredients, and I forgot to spray the dish with Pam. Oopsie.)
