We had pan-fried chicken cutlets (cut from the boneless skinless chicken breast that was on sale a week or two ago)
Cut each breast into 4 strips, dip in egg, then a mixture of 4c seasoned breadcrumbs to which you've added chopped garlic, pecorino romano cheese, and fresh basil, then pan fry in olive oil and finish in 325 degree oven while the side dishes are cooking:
We served it with buttered egg noodles, steamed Greenwise carrots (BOGO!), and canned Niblets corn (another BOGO!). |
