Easy Chicken or Turkey Divan
GREAT for leftover chicken or turkey!
1 pkg. frozen broccoli spears (or fresh, or chopped...), cooked
salt
2 boned cooked chicken breasts (or approximately two cups chicken or turkey pieces)
1 can (10 1/2 oz) cream of chicken soup
1/2 c mayonnaise
1/2 tsp. lemon juice
1/2 tsp curry powder
1/2 c Cheddar or American cheese
1/4 c. soft bread crumbs (optional)
2 Tbsp butter or margarine (optional)
Drain broccoli and arrange in shallow 1 1/2 qt. baking dish. Arrange chicken on top of broccoli. Mix soup, mayo, lemon juice, and curry powder and pour over top. Spread lightly to even out. Sprinkle with hceese and bread crumbs mixed with butter. Bake at 350 for 25 minutes. Serve with rice.
Makes 2 - 3 generous servings; recipe is easily doubled or modified -- I often make a lasagne pan full.
