Okay, so tonight I made a chicken pot pie using poached chicken.
The thing is, I poached WAAAYYY too much chicken and this is the only thing I have ever used poached chicken in.
Other than chicken salad and maybe bbq chicken sandwiches, do you guys have any yummy recipes using poached chicken??????

You could make chicken and dumplings with it, or chicken and noodles. There is also a cheesy chicken and noodles recipe over in the What's for Dinner Tonight thread that looks really yummy that I think calls for poached chicken.

Chicken soup, chicken with rice, chicken enchiladas, chicken tetrazzini, chicken spaghetti, chicken nachos, chicken tacos . . .
One of my girls' favorites is to add cooked chicken to one of the pasta recipes I make a lot. You can find it under the Recipes form, the "pasta" section. It's called Noodles Parmesan. Takes about 20 minutes, costs about $2 (without chicken).

We use extra chicken to make chicken tacos. Just mix the cut-up chicken with canned or frozen corn, and add packaged taco seasoning following the directions on the package. No recipe, I just eyeball the chicken/corn mixture to make sure it looks like 1 - 1 1/2 lbs of cooked hamburger (more or less) and take it from there. This makes great nachos too!
