    Default Help! I need recipes for Chicken Pot Pie

    Ok .. my last request for fried chicken recipes was such a success, I thought I would ask for Chicken Pot Pie recipes.

    I have never made one and would like to give it a try.

    A few weeks ago I found the Pillsbury Pie Crusts on Sale for $.50 each so I have 10 -12 in my freezer ..

    I dont make it from scratch and I know I take a few shortcuts but here it is :)

    I dice a couple of potatoes and boil them along with half to 3/4 a bag of mixed veggies, ya know the kind with peas, carrots, and corn (I don't measure, just whatever looks good)
    I also boil a couple of chicken breasts, maybe three depending on size, and then dice into bite size pieces.
    Mix all the veggies and chicken with one can cream of chicken soup and one can cream of potato soup. Pour everything into a Pillsbury ready to bake refrigerated pie crust (in a 9x9 baking dish) and put on the top crust. Then, I cut four slits in the top crust. I cover the edges with aluminum foil and bake at 350 for about half and hour. Then I remove the foil and bake until golden brown.

    It's so good if I do say so myself. I got the recipe from my dad, I think he may have gotten it from a Campbells can but I'm not sure.

    Mine is really simple too, and I get tons of compliments! I use cream of celery, frozen mixed veggies and about 2 cups of chicken (my DH smokes several at a time and we package and freeze the meat) mix it all and season with celery salt and pepper as needed. I warm it on the stove top first until the veggies are thawed, then pour it in the crust, top it with second crust and bake it! YUMMY!!!

    I have cream of celery in the house that I use for othe recipes so Im going to use it in this one. Something new to try, this is great!

    I boil potatoes, cook up some chicken, add peas, corn, green beans and a can of cream of chicken soup, and mix all together. Then pour that into a casserole dish. Mix up some bisquick mix and just pour it out on top of everything. Bake. Yummy :D

    Here is the one that I use. The only change I make is that instead of using frozen veggies, I use one can of diced potatoes and one can of mixed veggies (or peas and carrots). I've also used tuna instead of the chicken...which I love!! My husband found this recipe when he was single...and made it quite often!

    Chicken Pot Pie

    1¼ hours | 30 min prep
    SERVES 6 </SPAN>

    1. Heat butter over low heat until melted.
    2. Blend in flour, onion, salt and pepper.
    3. Cook over low heat, stirring constantly until smooth and bubbly.
    4. Remove from heat.
    5. Stir in broth and milk.
    6. Heat to boiling; stirring constantly. Boil and stir one minute.
    7. Stir in chicken and veggies. (Add in 1 - 2 diced cooked potatoes if you like!).
    8. Reserve.
    9. Line pie plate with prepared bottom crust.
    10. Pour in filling.
    11. Top with top crust. Cut slits in center to vent. Flute edges.
    12. Cook uncovered in 425°F oven until crust is brown; approximately 30-35 minutes.

    I do mine really easy.

    1 - frozen mixed veggies (or could use cans, I am just swimming in frozen veggies)
    1- can diced pototoes
    1 can cream of chicken soup
    1 lg can chicken
    salt, pepper, any other seasoning you want

    Mix all in pot on stove until heated. Dump in pie shell. Cook for 25-30 minutes or until top of shell begin to brown.
