I could never make fried chicken as good as my MILs. One day when she was making it I watched and found out the secret. She uses so much grease that the chicken is completely covered so she is almost really deep frying it. I subsequently found that that lots grease, butter and lard are almost always the secret ingredient in her much-loved cooking.![]()
DH's aunt used to fry, but then bake in the oven, OMG..I wish I would have gotten her recipe before she passed, have yet to have any that good!
I take a bottle of Crystal (any hot sauce will do) and add pepper & poultry seasoning, you don't need much, pour it in either a big bag or tightly lidded bowl. Place chicken in sauce and let marinade for 24 hours. You will want to either flip the bag or turn the chicken in the bowl. Then I flour in chicken breader (you can find this in the same section as flour), fry the chicken. My boys love this, but then they love everything spicy.
I've also taken boneless skinless chicken, cut up in bit size pieces and prepared the same way, great for parties and no bones. Kind of like boneless wings.
I place flour in bowl and add seasonings such as garlic powder, Adobo, and pepper. I use lots of pepper but use whatever you like. In another bowl I mix couple beaten eggs with milk. Dip chicken in egg milk mix then in flour and then back into egg/milk and flour. Deep fry and it comes out with a crunchy nice coating.

I do the same as the others posted but I season my flour with season all lemon pepper and garlic powder until I can taste it when I put my finger in the flour( not strong but just enough) then I dip in milk/egg mixture then flour times 2. I double dip because if not the chicken does not get very coated, then fry.
I also have used this recipe with boneless chicken breast. Crush up ritz crackers and use them as your coating then bake in oven. I don't season the ritz becasue they already have salt on them. OMGOsh these are so good :) And no greasy mess to clean up.
