    CHEF HELP! Bored with roasted chicken

    I have a whole chicken that i'm making for dinner tonight. Normally, i use thyme, rosemary and season all to make a rub. as good as it is, i'm a bit burn out on it. I checked the recipe forum, did'nt really see anything. suggestions anyone? I need to get it into the over soon.:hectic1:

    Have you ever tried marinating it in italian dressing,it's so delicious my family loves it just a little seasoning salt,some onions and BAM(love emeril)

    I use italian dressing as a marinade all the time, never thought to use it with a whole chicken though. definately on my "to do" for next time but right now, i dont have to time to let it marinade, will need to put it in the over VERY soon. Same ol rub i guess lol

    hmm, i found some peppered season-all and also found some lemon&pepper seasoning salt. I'm thinking either would be a welcomed change.

    Sam's Club sells a poultry seasoning. I think it's made by Lawry's? Anyway, it's one of those that come in the tall containers for restaurant use. It is not terribly salty, so you can really coat the chicken (I go for about 50% coverage on mine) and then bake or put in the rotisserie.

    I found out about it by accident when an employee overheard me saying I wished I knew what they put on their rotisserie chickens because we could do that at home in our new rotisserie. So she told me their 'secret.'

    It's not terribly creative, but it's really good and a no-fail.

    I was thinking lemon before I seen someone suggested lemon seasoning. Pull the skin away from the breast and stick some pats of butter in between the skin and the meat. Rub butter on the outside and squirt some lemon on the chicken along with some zest from the lemon. Put the squeezed slices in the cavity.

    Or put a stalk of celery, some onion, and rosemary in the cavity and pour orange juice on the chicken and bake.
