Default Foil Baked Chicken

I posted this in the thread, asking for ketchup ideas. Thought I'd post it here too. I used to make this for my kids when they were younger. They loved it!!


FOIL BAKED CHICKEN
1/2 c. water
1/3 c. catsup
1/3 c. vinegar
1/4 c. brown sugar
4 tbsp. butter, melted
2 tbsp. Worcestershire sauce
2 tbsp. lemon juice
2 tsp. salt
2 tsp. paprika
2 tsp. chili powder
2 tsp. powdered mustard
2 broiler-fryers, cut up

In bowl, blend together all ingredients except chicken. Dip chicken pieces in sauce. Divide chicken in 4 to 6 serving-size portions, placing each serving on separate piece of heavy foil.
Pour about 1 tablespoon sauce over each portion of chicken, seal foil securely. Bake in 400 degree oven for 45 minutes. Open foil packets, brush with remaining sauce. Bake 15 minutes longer. Makes 4-6 servings.

Would this recipe work with boneless, skinless breasts? I know they tend to dry out alot quicker... It sounds so delicious, I really would like to put it on the menu in the next two weeks.

I never tried it with boneless breasts, but I'm sure it would work. I'd cut the time down from 45 to 30 mins on the first part though. You can always add time if they're not done enough.

Just wanted to let you know that I'm making this tonight with boneless breasts. I'm also using a couple of pieces of salmon in one pouch (for me!)...but I'll be cooking it at a much shorter cooking time. I'll let you know how it turns out.

OHH, thats a great idea with the salmon! I have a package of salmon burgers that need to find a a purpose.. This might be it, totally let me know how it goes!

OK...here's the update:

For the boneless chicken breasts, here's what I did. They were really big pieces, so I cut each one in half. Then I followed the recipe, but I only baked them for 30 minutes instead of 45 for the first part. I still opened the foil, added sauce and let them cook for the 15 minutes. My husband said they were great!!!

For the salmon, here's what I did. Each piece was 4 oz. I baked them for 15 minutes for the first part, then the additional 15 with the foil open.

My husband suggested that it would work for pork chops or western ribs, if they're ever on a good sale.

Glad to hear it turned out so well! Funny you should mention pork chops, there on sale at my local grocery store for $1.39 lb.. hahah maybe I'll do one foil of chicken, one of salmon, and one of pork chops... We can taste them all! lol
