I have been making these for a while and they are always a hit in my house. As I was making them tonight I thought y'all may like them, too. My purpose was to use some of the Target tortillas before they expire. I tripled the recipe (loosely- as I no longer really measure the ingredients) and they are in the oven now. We will eat our fill for dinner and the rest will go in the freezer. They store well just in a freezer bag. When I want one for lunch I pull it out, stick it in the microwave for about a minute and then just put it in the toaster oven to finish warming and recrisp. Yummy and, thanks to Target, super-cheap!

The tortillas that I bought at Target are now beginning to expire, so I thought I would bump this recipe.
Other than breakfast burritos, do y'all have any other ideas for dishes I can prepare that freeze well?
I have never frozen this but have frozen lasagna in those aluminum pans. This is a tortilla lasagna. It's good, we make it a lot, and if you already know tortillas freeze well, then I don't see why this wouldn't.
