I found a great recipe online and then changed it a bit to suit our tastes. It turned out great!
Chicken Filled Dumplings
2 cans cream of mushroom, celery, or chicken soup (I mixed mushroom & chicken together)
2 cups cooked chicken, diced small (I used leftover turkey from Thanksgiving)
1 cup vegetables, diced small (I used a brocolli/cauliflower/carrot blend)
2 cans refrigerated biscuits
shredded cheese
Pour the soup in the bottom of a baking pan (I mixed mine together in a bowl first since I used two different ones). Mix chicken and vegetables together with any spices or seasonings you want to add. Flatten out the biscuits. On half the biscuits place some of the chicken mixture. Top each with another biscuit and pinch the edges together to seal. After all the biscuits are made up then place them in the baking dish. Bake for 20 minutes and then sprinkle cheese on top. Bake some more until biscuits are cooked and cheese is melted.

Anyone try this? I'm looking for a chicken recipe for my super picky kiddos for tonight and thought I'd give it a shot. I'm thinking I'll do it with some Steamfresh corn since my kids are so picky about green veggies.
We make something like this as well, i have never used cream of celery w/ it. I may just have to try it that way.
I don't care for the texture of normal "dumplings"-- too dough-y for me... How do these turn out as far as texture? Has anybody ever tried these WITHOUT the cream of soups in the bottom, more like little turnovers?
I wonder how it would turn out to reduce this to ONE can of soup, mixing it in with the chicken and veggies, then covering the pan with foil to keep the biscuits from browning too soon?
One last question: any idea how these would do to freeze, either raw or cooked? I have a friend who loves pot pies and dumplings, and these sound like something he could make up a bunch of and pull a couple out at a time, instead of buying those cheap, frozen pot pies that have who-knows-what in them... LOL

I do something very similar to this with crescent rolls ... I use one can of cream of chicken and 1/4-1/2 c milk. And, I only use cubed chicken and cheese with a little of the soup mixture for the stuffing. Roll them up as best as possible, them pour the remainign soup mixture and some shredded cheese atop and cook. Yum-my!!!

I used to put the biscuits on top of my stews and they were fine. Not doughy or gummy. This sounds like a great recipe with some great alterations! Thanks! I eat mostly chicken anyway and I am always looking for new easy recipes to use.
For the one who doesn't like green veggies? They have lots of yellow veggies too! lol
