    I need help with what to do with cornish game hens. i already have tried the lemon/herb/seasoning in the oven i need some new ideas. thgansk so much

    Rosemary/Thyme/Sage rubbed on them while cooking *under the skins* and a little butter spray.

    You can also make a rich cream sauce for over top of them:

    Make a simple rue then add basil & a few spoons of parmesean cheese. Tastes like something right out of a restaurant!

    Make a marinade of Balsalmic Vinegar, Extra Virgin Olive Oil, Garlic, Salt and Pepper.

    I usually cut them in half and then let them marinate for a couple hours. When I put them in the oven I put alittle extra of the marinade overtop of them.

    I have two suggestions:
    1. Make Crockpot Cream Cheese Chicken-just cook your game hens, debone them and use in place of the chicken breasts. Recipe below.
    2. Brine your chicken before cooking in a mixture of apple juice, parsley, sage, rosemary, thyme, and salt. Gives it a totally diff. taste AND texture. If you want a recipe for this pm me and I'll send you to my blog.
    Crockpot Cream Cheese Chicken

    4 chicken breasts cut in 1/2
    1 packet dry italian salad dressing mix (like good seasons)
    1/4 c. water
    1 block cream cheese softened
    1 can cream of mushroom soup

    put chicken in crockpot...mix water and salad dressing mix and pour over chicken...cook on high for 3 hours...in a bowl mix soup and cream cheese until smooth...pour over chicken and stir well...cook another 30 minutes...serve over rice or noodles..

    Hope those help. We're not big fans of game hens, either, so when I get them on sale, I usually adapt them to work with our fav. chicken recipes.
