Default New temp. standards for your turkey...

Used to be 180* F, in the spring the USDA lowered the safety minimum to 165*. If you cook until the breast is 165, the legs and thighs will most likely be hotter than that. To be certain, take the temp at more than one location. Stuffed birds should be heated until the stuffing reaches 165*.

That is great news for those of us who don't like our turkey dried out. However, you may not like the legs and thighs cooked only to 165. They will be chewy, pink, and seem undercooked.
I can't be done shopping, I still have coupons left!!!

If you cook the breast to 165* the legs and thighs read a higher temp...they usually cook faster which is why to check the temp in the breast. While the legs may read 165*, the breast might be much lower and need to cook longer...thus if the breast reads 165* the legs and thighs should be cooked all the way through. Again..best to check them seperately to be sure.
