I beat ours with a meat mallety thingy and diagonally slice the sides so it doesn't curl up & then throw it into a hefty freezer bag with a bottle or two of marinade and freeze it. Then when we are ready for LB I get it out and put it in the oven on 250 for hours @ 3? and check on it the last hour I bump it up to 350. so it marinates as it thaws/cooks:)
